I'm done Buying Blues Hog
...in pints! Can't get it in stores around here so I'm buying online, finally made the jump to Gallon Jugs. Got one gallon of Original and One of Red. I love them mixed 50/50 so I'm going to set up some pre mixed mason jars. I assume there is no issues with Freezing it?

How did freezing work for you? I would like to get away from ordering pints as well.

I also mix in pints and some quarts. Once mixed, I run them through a 10 minute water bath in the canner to seal them. Just like store bought without the labels.

So far so good. But it hasn't been long enough to see if it will freezer burn and alter anything yet

As long as you don't open a gallon jug, do you guys think it would be any spoilage issues? I bought 2 gallons back in March. The open one has been in the fridge since March and still tastes fresh, the unopened one is stored in a cool place in my office.

I get it from Big Poppa's in the gallons (free shipping) and keep it in the fridge in the garage. It stays about 34* and I have had it for up to six months and never had an issue. Don't think I would be freezing anything in mason jars.

I don't know about Bill's sauce, but being in the BBQ sauce business I can tell you that the vast majority of the sauces on the market are " shelf stable " meaning that they have a high enough acidity that they do not have to be refrigerated. All of my sauces are shelf stable and I keep open containers in my pantry with no spoilage issues. I'm sure Bill also has made sure to shelf stabilize his sauces. They may say refrigerate after opening, but that is just as a disclaimer.
