Ribs on a 18.5 kettle WFO Style
 
Trimmed some spares down to St.Louis cut and rubbed with Fiesta Pork Rub.

Using some rebranded RO briqs and apple wood and going indirect WFO (wide the FARK open)!! No need in knowing what the temp is.
Now that the thin blue is rolling, it's time to start.

Ribs passed the toothpick test at 1 1/2 hrs, time for some doctored SBR sauce!

While the sauce was setting for 10 mins or so and then resting, SWMBO had made some Rotel dip (1lb ground pork, small can of Rotel, small block of velvetta) and I thru on some on Bratts.

The ribs took excactly 2 hrs at WFO temps and was some of the best I've cooked in a long time!! Really liked the Fiesta Pork Rub too! Thanks for following along.

Nope. None at all!! I did paint with some Parkay Squeeze tho. I've never cooked ribs that fast before and from now on, that may be how I do them.
They were very good!!
