Short Ribs for Sunday?

So I had a couple of racks of short ribs I was going to cook tomorrow. I decided to cook them today figuring I'd have enough left over for tomorrow. Mrs. campdude doesn't usually eat beef ribs. When I took them out bandera, she said "Fark, they smell really good"! Well, not in those exact words, but you get the idea. So now I only have two bones left for tomorrow. Oh well, she doesn't eat a lot of BBQ, so it's good to see her enjoy it once in a while.
For the cook, I trimmed them up, then one rack got Ployboys Bovine Bold, and the other just got grey salt and garlic powder. Into the smoker at 290* for about 2 1/2 hours over KB with hickory and cherry. Then I put them on a rack in a foil pan with beef stock in the bottom and covered with foil. About an hour later I pulled them out and tossed them over the coals for 3 or 4 mins. Sorry no plate shot, but did get a shot of dessert. Dark chocolate brownie with German chocolate icing on top. Looks great. Meat really shrinks on the bones.
 
Very nicely done! Looks fantastic and I have no doubt all of that tasted great!
 
Wow, it's not even 4am and now I'm hungry for BBQ. Those ribs look outstanding. Apparently both campdude and Stater Bros are now famous for their meat
