Ahi tuna steaks with Thai dipping sauce... pron!

Sometimes I like to cruise over to Costco, pick up some meat or seafood, and run home with my stash before my wife finds out what I've been up to.

I was looking specifically for a rack o' pork (like a rack of lamb) because I figured it would make some killer pork chops. Sadly, no more rack o' pork, but I found some good lookin' Ahi tuna steaks.

Received my Dizzy Pig sampler pack yesterday, just in time for the weekend.

Picked the Tsunami Spin since it is has lemongrass, galangal, and some other Asian flavors in it.

Fired up the cast iron hibachi. It was poking along since I used some leftover lump... until I hit it with a leaf blower. Ash flew around a bit, but it got the party started. ( I know it looks like its too close to the window, but its actually a couple of feet away).

Made the dipping sauce. Juiced a lemon from our tree, fish sauce, garlic ginger, cilantro, and Thai chillies from our yard ended up like this:

Steaks with sesame oil, DP Tsunami Spin and nanami togarashi for some kick.

Steaks on! There's that weird purple flame again. The seller never told me that he was selling me the purple flame version.

Flipped em at 1min 30sec, then pulled at the 3min mark.

Rested and plated. Wife made a stir-fry with garlic, baby eggplant, broccoli, carrots, miso, and a dash of soy - it was darn good!

We were stuffed, and it was a very healthy meal. I'm getting a real kick out of cooking on the hibachi. I had neglected it for a while, but trying to make up for it now.

Ah the flavours of Thailand! Tuna looks great. I love it when you can get the balance of flavours correct in Thai cooking - that is a balance of sweet, sour, spices & hot! I didn't notice any sugar in your ingredients. Also did you use the roots of the cilantro?
I am holidaying in Khao Lak in Thailand and I am enjoying their street food.

That ahi looks outstanding. You've motivated me to run over to the Bunker Hill Costco and look for some ahi too!!

I'm so jealous. I thought India had great streetfood until we went to Thailand. The flavors were just absolutely amazing. And you're right - its the balance of flavors that
blew us away. Forgot to mention the sugar as you pointed out!

I always buy the tuna and eat it raw with white rice and wasabi!!

Just love it raw!!!
Never tried that with the Costco Ahi. Will have to give it a go sometime.

To be honest, the dipping sauce made the rub unnecessary. I may leave the rub out next time.

Get over there. Except for shrimp, ribs and pork butts which I get from HEB, I get all my stuff from Costco. Especially seafood- Ahi, lobster tails, salmon are all good there.

Had a couple of large tiger prawns & a squid BBQed over charcoal for lunch. They served a dipping sauce that I guess had just about the same ingredients as your marinade except they use lime & not lemon. The dipping sauce so fantastic that one could almost eat your fingers by mistake. The BBQing was also spot on - just cooked. Wow!!!

I love Tuna I use to love cooking on my lodge hibachi You can get pretty good tuna and salmon steaks from Costco
