Adding ribs to a briskett cook?
 
Hey folks, I'm having family over for a birthday/fathers day get together, I love brisket, dad loves ribs. I have a brisket in the UDS right now, I was going to start a rack of spare ribs at 11am. Am I going to screw things up if I add the pork, im afraid that I wont be able to keep the temp up to finish the brisket since Ill be removing the top using the 3-2-1 method for the ribs. Should I skip the ribs or should I get the brisket up to 275 so it doesn't drop to much? I'm new to all of this and this is my first smoke with the UDS, sorry for the rookie questions and thank you so much for the help. ~Anthony
