Beef ribs are a real nice treat, they're hard to find so when you can get em it's like a day after winter :laugh:

Yep, completely normal. When you can find good meaty beef ribs, they puff up nicely and recede to the middle of the bone and sometimes to one end of the bone.

There are Back Ribs and Short Ribs- backs have meat 'tween bones and shorts on top bones and both have much shrinkage but taste So Good!
