Pork Butt Injection
 
Pork butt question
I am finishing my 1st year competing in BBQ contest. I am finished with 5 KCBS events around the Kansas City area with 2 more to go.

We have stalled out on pork butt. We are finishing in the bottom 50%.

I have used a Cajon butter sauce for injecting the butts in the past events. We just do not get the taste we need, it's flat.

I have been doing a lot of research on the web. I have come across a few that looked good.

My questions
What is your favorite pork butt injection?
Do you use your injection to put in with your meat when you foil wrap your butt? (If so, do you modify it)?
What about vinegar?

I switched to "Sweet Smoke Q" and have had decent results (even without saucing). I still need to fine tune it but it's definitely something to consider.

Fruit juices (apple, white grape, etc) are always good to add to your injections

A lot of competitors use their own versions of Lillys where they start with apple juice, mix in worchestershire, add in their own rub, etc.

I use sweet smoke Q JUICE, out of 19 contest this year I haven't scored out of the top ten but once or twice in pork. 3 or 4 first place call, two of them .5 point from a perfect score. I'm number 1 in the pork category in the FBA this year so it must be working.

I inject 6-7 hours before it goes on the smoker, cook in a pan, and use the pan drippings when I foil.

Question, if you add juice to a mix (fab p) does that replace the water. I would imagine but thought I would ask.

Use Butcher Pork injection use water or juice or what ever you want for moisture.

Smoke On Wheels Pork Marinade does NOT have any phosphates added in, so it can be used in combination with others like Butchers or Kosmos, if you choose. We like to use it straight out of the bottle. Quite of few comp teams are doing very well with it. :grin:

And it is made locally in KC. :wink:
