We will be getting out first day in the 80's on Sunday and the warm weather brings the first visit of the outlaws...They are here one day only, so an afternoon lunch thing will have to do. I need to add something like a fruit platter or something and need some ideas.....

The menu as sketched in so far is:


Smoked Salmon Served chilled with crackers and a couple of sauces. I bought a full side. I'm getting it in the dry cure this afternoon and most likely smoke it Saturday evening.

Baby Back Ribs 2 racks sauced and 1 rack dry.

Thighs 2 pans of the Jumpin' Jim Bite-Through ones and 6 (thighs, not pans) crispy and spicy, the way I like them.

Keri C's Hog Apple Beans I got some thick sliced apple cinnamon bacon to go in these, should go well with the apple pie filling.

Norco Mom's Rice I don't think this will be too heavy of a side with all this other food
 
The only help I can offer is "helping" you all eat that great food!! Seems like all you need is a dessert. I'm not much of a sweets guy, sorry! But everything else sounds killer!!

I make a killer key lime pie with coconut in the crust. I'm not sure if they have had it, but it's been over a year since the last visit.

Gonna check with travel agent, might have to make it 5 racks. Should be a nice spread.
 
Your neigbhors will be climbing the fence when you fire up Sat with that Salmon.....

Your right, you do need a pallet cleanser like a fruit plate in there...or some veggies, dont know what that rice recipe is but you can bet its my next search...

Had a great time. Finally got to meet Mrs. Mista. Neil brought ribs and I studied his technique. As for the rice it is a recipe my mom learned in the Philippines where I was born. The original recipe is a fried rice here is the ingredients for hers.

2 cups rice cooked
1lb. bacon cooked and chopped
1 bell pepper diced
5 or so diced green onions
4 eggs
1 whole garlic minced
soy sauce

Add bell pepper, garlic, onion, and saute in a little of bacon grease. Not too long or peppers get mushy. Add eggs, bacon and stir to scramble eggs. Add some soy sauce and rice. cook and stir as adding soy sauce to taste. I like more soy in mine.

I never watched my mom make it but learned from my sister. I put a twist on it as I began doing Q. When i fire up my smoker I cook the bacon in heavy smoke. Instead of bell peppers I started using 6-8 cored japs. This came to me because I always buy extra when cookin ABT's.

We ate this rice a lot growing up and as we left the house it was a treat when we came to visit. My mom always pulled me aside and said she made it special for just me. Little did I know she told my brothers the same. We always went home with a country crock, or cool whip container full (never returned her tupperware). Never found a person who did not like it. I have some trimmings from ribs I smoked I plan on using next time i thaw them out.

Here is his mom's recipe and his comments. My couple of changes are in RED.

The salmon is out of the way, I did it Saturday. Ribs just hit the BDS, chicken to follow in 90 minutes

Yeah, me too. Here are the ribs and the Jumpin' Jim thighs (I'm giving them a 30 minute head start over the others.

I'm ready to start drinking, everything is on auto-pilot now.

"They are here one day only"...lucky duck! :biggrin: My wife's Father, Brother, Sister-in-law, and their 3 kids are coming in for a week Memorial Day Weekend...:eek::eek::eek: I'm doing "Copper River Salmon" over Alder-wood on the fire pit, pulled pork, beer can chickens, and ribs. I figure if I spread out my BBQ over the weekend I'll survive until I go back to work on Tuesday. :twisted:

That is a Luhr Jensen Big Chief. They are salmon and cheese smokin' machines. Here it is with my winter mod. The second picture shows the rack set up.
