somebody shut me the fark up.
Last Phriday Padawan saw this piece of US meat with 35% discount at the wholesale store.
Due to the Phat cap,marbling and discount I had to take it with me.
Normally this cut would be used for stew or you can cut out the tendon(?) and grill it as steaks.
I didn't want to have none of that and because it had a high amount of Phat I wanted to try it Low 'n Slow without Phoil and/or liquid.
Scored the Phat cap,sprinkled with a bit of Lawry's and a Phair amount of BigMista's Bitchin' BeePh rub.
APhter 8 hours overnight oak smoke on the Midi UDS the beePh was probe tender.
Put it in a coolerbox with a towel...went to bed for a couple of hours,eventually pulled the beePh aPhter 8 hours resting.
