Overnight Boston butt on the Primo XL
 
I'm pretty excited to finally be doing some Q again...we put our house up for sale about a month ago and are in the process of moving, and before that I was in a mad dash to get the house listing ready. I havent really barbecued in about 6 weeks....in other words, an eternity. Decided I needed some meat and fire back in my life, and could only fit in an overnight cook on the Primo ran by my Flameboss, but I'll take it.

This butt caught my attention as I was walking by the cooler at Sam's Club....much more marbling than its peers, lots of fine whispy striations. About 7lbs or so, IBP brand. Injected with Oakridge BBQ Game Changer and rubbed with a combo of Secret Weapon and Dominator. Rockwood lump, apple and hickory wood chips, running around 235*.

Feels good to be back in the saddle again...even if it's just the Primo with a temp controller :thumb:

It is! Pics dont really do it justice, but it was exceptional. The others in the bin weren't even close, but all were IBP.

About to hit the hay....Flameboss is doing its thing. This is also the first time I've cooked under 250* in a looong time. Trying to time it to a 10am finish then a 2-3 hour hold to eat during the sportsball game tomorrow.

It looks like the Primo ran out of fuel about an hour ago....I used the divider and only did a half load. Gonna be an oven finish, but its probing pretty soft now so I'm guessing itll be done in a couple hours by 195*.

I'm liking the color it developed though, sitting at 179* internal

Yeah, true true. It was filled pretty high in the charcoal basin, but I think the Rockwood pieces were larger than other brands I've used lately and must've packed it in there less densely in the dark or something. Normally I can run 12 hours easily and still have unused charcoal in the basin.

Pulled it from the heat at 199*, probes like butter, jiggles like jello. I think itll be a good one. Now for the towel/cooler treatment until noon kickoff.

Turned out pretty tasty, came apart effortlessly and was really moist. Go Chiefs!
