Venison buck-n-bourbon and my first Serviettenknödel :)

I've been getting a lot of use out of the venison from this season..it's nice to have on hand.

Made a batch of venison and bourbon on the drum and tried a batch of "napkin" noodles to go with it. A friend in Austria told me how to make them. This was my first try.


I seasoned some of the cubed venison with salt and pepper, then floured and fried in bear lard.

onions and garlic..

added beef stock, marjoram, thyme, basil, smoked salt, cracked black pepper
then onto the BPS drum to simmer..

The venison simmered until tender, about 5 hours

made my Serviettenknödel

milk, eggs, parsley, seasonings and bread cubes...

they are rolled into a kitchen towel but I used cheese cloth...

simmered until firm...

then sliced... I fried some in butter too, they were pretty tasty. :)

And that looks like a perfect winter meal - actually I'm sure it'd be great in spring, summer and fall as well! I've never heard of the napkin noodles - just dang! :hungry:

Napkin noodles never heard of them but they look easy(in other words i could do it:mrgreen:) and yummy!

Did you make up your own spices for the napkin noodles, or are there particular spices that make them napkin noodles?

Thank you friends! The dumplins were pretty easy to make, but kind of messy. I think foil would be easier to use than cheesecloth. :grin:

Thank you Mike! Rifle season was good this year.. I'm not a trophy hunter, just go for the meat.

Thanks KC!! :becky: I put egg, milk, pepper, salt, garlic, minced onions and parsley in the noodle mix but I think you can add nutmeg.
I was told parsley is the main herb. I guess they use day old bread most of the time too.
It was tasty fried in butter. Thanks again! :-D

Hope you and your Jeannie give them a try. I think you could use a variety of spices in these noodles to kick up the flavor.
