Overnight Injection
 
I've read that itw bad to inject and let sit over night if the injection has "too much salt". How much is too much? I just got a 18lb butt and the injection uses 1/4-1/2 cup of salt. Is that too much to use to sit overnight?

I have never had an issue. Personally, I like to use the Chris Lilly injection (or what has been posted as his) and it has quite a bit of salt. If I am injecting, I always inject and rub the night before if I can.

Hhmmm interesting. I've always been told that too much salt could break apart the meat or dry it out or whatever.

We use the Jack's Old South injection (from Myron's book) the night before. It's never been a problem.

I never inject a Pork Butt or Shoulder there is no reason to unless you just don't like the taste of BBQ pork and you want it to taste like Anchovies or Pizza instead of Sweet Smoky Swine.
