Smoked chicken in a butter bath
 
I saw some pics from a competition about bathing chicken in butter while it sits in the smoker. Seems simple enough. Why haven’t I tried this?

5 pounds of wings, Q-salt, and a pound of butter:

After two hours of smoke I sprinkled some blackened seasoning and let it crisp up

Then back in the pan to reabsorb the chicken butter:

I strained what was left in the pan and after using some for dipping, I now have 12 ounces of smoked chicken flavored butter. What would Cowgirl do with it?

This is an extremely effective technique and I'm sure with your ratio of 5# of chicken and 1# of butter turned out a good product, but that is pretty heavy handed with the butter. An alternate is making a slightly strong chicken broth and pour enough in your pan so it's about halfway up the chicken, then top the pieces with a squeeze of Parkay, or a pat of butter. During the cook you have a buttery broth which works well during the braising step.

After you braise them, return the pieces to the smoker to set them up or to glaze.

I wanted a rich butter taste and if you ever sautéed anything in butter you know that buttery char that I am after :heh: I figured the pound only cost me $2.88 so what the hell. I’m surprised I only lost 4 ounces of butter in the entire process though.

I am not sure you had enough butter for the amount of chicken??? :heh: I like to use Zatarains Blackened seasoning on a lot of things! Good looking food! :thumb:

I’ve always experienced dried out chicken beforehand, either from me or an establishment. The butter changes everything.
