Probe Placement in Butt?
Getting kinda tired of my thread titles.
Do you place the probe from above and through the foil? 2" from bone or so? I went in from the side and leaked unnecessarily. From above seems better. I need to think about the placement better next time. It was an afterthought as I started my first butt today. |
I don't think the change in 'leakage' would differ significantly no matter where you put it in.

I assume you are talking about a temperature probe that you leave in the butt? If so, to me it is only a guide to get to the approximate temperature of doneness. I then hand probe all over to find when the probe easily slips in.
That being the case either from the side or from the top work about the same. I used to foil after the stall but now I only foil to rest and hold. |
I usually go from the top as well, both when it's in and out of foil.

Anyone ever get some foil embedded in the meat from probing? I have.

I just pick a spot that is usually in the neck muscle. When it approaches the temp I'm looking for, I probe around the butt with my impeccably accurate BLACK Thermapen. When most of the butt is at the temp I want I pull it from the smoker.
A few small holes in the foil make no difference whatsoever. |
