I needed a break after cooking three turkeys for thanksgiving so I decided to make a pig entirely out of pork. Hot sausage legs, ground sausage body, vienna sausage nose, pork rind tail, ham ears and a bacon wrap then slow smoked to porky perfection...

That's what my daughter said when I made the first cut through it's belly. She was upset until she tasted it.

We polished 'er off this morning. The kids didn't care for the spicy legs so mayb next time I use something more mild.
