Probably should have been more clear. First fry at 325 for 7-8 minutes. These par cook them. Then after they have cooled, you fry them for 2-3 minutes at 375 to crisp them up.

This ensures a nice creamy center with crisp outside for the fries.

There are a few ways to make great chips(fries) and the double fry is an easier method to get better results.
Geez that meat looks good.
