Sunday was a great day to smoke. I found a new place to buy meat and was able to get a 12 lb whole brisket - Prime.
Attachment 74307 Attachment 74308 After trimming the fat a little I applied the rub and put it in the refrigerator overnight. In the morning I injected it with a mixture of beef broth, worcestershire sauce, garlic powder and cayenne pepper. Attachment 74309 I used a mix of Royal Oak lump and cherry logs. Attachment 74311 Here it is after a few hours. Attachment 74310 And after 7 hours - just before wrapping it in foil for the rest. Attachment 74312 Ready for carving. Attachment 74313 And did it taste good! BTW, the fat side was on the bottom. [ATTACH]74314[/ATTACH Thanks for looking! |
