Thanksgiving Ham

Going to try Dr. Chickens double smoked ham on Thursday. Have any of you tried this before? I haven't been able to find the butterpecan extract or butterpecan pancake syrup which is used in the "Sweet Kiss of Death" injection marinade anywhere. Thinking about substituting just plain old butter. What do you think?

Watkins is good source for the extracts, check and see if there sn't someone in St Joseph that is saling it, the prices are real resonable.
Be sure and wrap the ham tightly in plastic wrap before injecting. Phil suggestion of adding butter and allow it to set up some before injecting also helps.

Going to try this as well, I couln't find the butter pecan extract either, so I'm planning on using some imitation butter extract ---may not be the same but it's either that or butter---not fighting last minute shoppers today.
