15 days until we eat turkey….A holiday I hated in my youth …Grandmas pureed parsnips and other boiled and mashed things squash ,turnips……(dry heaves) really sucked. My first thanksgiving down south with sweet potatoes with loads of brown sugar, cornbread stuffing and flavorful conconctions really changed my whole outlook on the holiday. I loved my Grandma but she really coundn’t cook. I was thinking the bro’s had some weird and favorite Turkey sides they would share.
Heres one that sounds gross but is the first to vanish
Pink Stuff
12 oz. Cool whip
12 oz. Cottage cheese( drained)
8 oz. Box of strawberry jello
12 oz. Can crushed pineapple( drained)
Mix .chill and serve
Try is with Lemon-Lime jello!! :D
Brocolli casserole - lots of cheese and Ritz cracker topping.
Cranberry salad with fresh cranberries, oranges, and lots of pecans.
Fresh mashed potatoes & gravy!
Pecan pie, pumpkin pie, Hershey's pie :D
(plus ham, turkey, roast beef, beans, corn, succotash, cornbread dressing, green salads, etc. etc. etc.)
All in all enough carbs and sugars to stun an entire third-world country.

Iv'e had the pink stuff and it is weard but very good. The kids love it as long as you don't tell them whats in it. Try this one. It really has a beautiful color and tastes great.
Veg Salad
Salad
2 cups green beens, well drained
1 small red onion, sliced
1 each, red bell pepper, yellow pepper & green pepper, thin sliced
1 cup grape tomatoes
2 cans butter beans , well drained
4 tablespoons fresh basil, fine chopped
Vinegarette
6 tablespoons apple cider vinegar
4 cloves garlic, crushed
6 tablespoons brown sugar
4 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
Warm vinegar and brown sugar to desolve, mix in remaining ingredients.
pour over salad and let refridgerate for 4 + hours

Sweet Potato Apple Casserole
Slice apples and sweet potatos into circles.
Lay down opposing layers in a greased pan.
Brown sugar and cinnamon every other layer too.
Brown sugar and bread crumbs on top.
bake for a couple hours until sweet potato slices are soft.
Now, I'm hungry

Bourbon Sweet Potatos

Corn Casserole - T (Kicks wife)makes it best!
Homemade Noodles- My wife's grandmother always mades these and now that she has passed, my wife has carried on the tradition. We always have her make twice as much as we think we might need as everyone wants to take some home!!!

Something new for us last year was roasted winter vegetables. My mother is an old New England Yankee and she insists that Thanksgving dinner should be composed of only vegetables available in the North East that time of year. So to make her happy I came up with this. I took beets, shallots, acorn squash, turnips, parsnips, rutabega (all the wierd root vegetables that we don't usually touch) carrots, and garlic cloves. Toss the beets with melted butter and a little olive oil. Toss the rest of the vegetables in a different bowl (cause the beet juice will turn everything red) with olive oil and melted butter, thyme, sage, savory. Salt and pepper to taste. Slow roast for about 2 - 3 hours. To my surprise, everything was great. I even ate the squash.
I also roasted a seperate tray of tomatoes sprinkled with Italian Seasoning (not in season, but I like it)a nd garlic cloves at the same time. I do this all the time in the smoker. The roasting intesifies the tomato flavor and makes a great basis for soups or sauce or just eating on their own.
Good crisp white celery, Black Olives, green olives, pepperoccini's. Italian mod.

Mama Stamberg's Cranberry Relish
2 cups whole raw cranberries, washed
1 small onion
3/4 cup sour cream
1/2 cup sugar
2 tablespoons horseradish from a jar ("red is a bit milder than white")
Grind the raw berries and onion together. ("I use an old-fashioned meat grinder," says Stamberg. "I'm sure there's a setting on the food processor that will give you a chunky grind -- not a puree.")
Add everything else and mix.
Put in a plastic container and freeze.
Early Thanksgiving morning, move it from freezer to refrigerator compartment to thaw. ("It should still have some little icy slivers left.")
The relish will be thick, creamy, and shocking pink. ("OK, Pepto Bismol pink. It has a tangy taste that cuts through and perks up the turkey and gravy. It's also good on next-day turkey sandwiches, and with roast beef.")
Makes 1-1/2 pints.

A holiday standard at our house, along with my Dad's mashed potato recipie, which is basically the recipie for twice baked potatos without the scooping and restuffing.
Big pot of boiled taters, 1 pt sour cream, 1 pkg philly cream cheese, 1 t garlic powder, 1 t onion powder, salt and pepper to taste, let the kitchen-aid do the rest.

assorted pies - I'm the pie baker in the family, and everyone has their favorites, so I usually bake too many to please 'em all. Standards are pumpkin, apple, pecan, maybe a french silk, and something called a Cape Cod October pie (cranberries, apples, raisins, walnuts, awesome pie).
Might have to try that Sweet Potato Apple casserole Bill - sounds good. Wanna hear more about the Bourbon sweet potatoes too BB (and should I use Tennessee or Kentucky bourbon??? Opinions, anyone?? :mrgreen: )

This always goes fast at our house. MrsMista doesn't even like carrots but she eats this.
COPPER PENNIES
1 lb. or more carrots (sliced thin)
1 can tomato soup
1 bell pepper, sliced thin
1 onion, sliced thin
1/4 c. salad oil
1/4 c. cider vinegar
1/2 c. sugar
1 tsp. Worcestershire sauce
Cook carrots for about 10 minutes; drain. Set aside. Add remaining ingredients to soup and cook until pepper and onions are tender. Pour over carrots and serve hot or cold.

You were right, spray the pan, but add butter pats as you build it up.
Sometime, when we use apples and pears, we cut back on the butter, because the pears are really wet am mushy

Scalloped Sweet Potatoes
Veg Oil Spray
1/4 cup sugar
1/2 teaspoon ground cinnamon
3 raw medium sweet potatoes,
peeled, sliced 1/4 inch thick
2 medium apples, sliced
3 tablespoons acceptable margarine
Preheat oven to 350*. Lightly spray a 1+1/2 qt casserole dish with veg oil spray
Combine sugar and cinnamon in small bowl and set aside. Place layer of sweet potatoes in dish, add layer of apples, sprinkle with cinnamon sugar mix and dot margarine/butter. Repeat layers
Cover and bake 1 hour, serve hot.
Taken from American Heart Association Low Salt Cookbook.
We have used pears too in place of apples, or added to apple/pear mix with great results.
Great dish, and VERY healthy!!!

I have been looking for this recipe since I posted this. Wife finally finds this over the weekend. Here is that recipe you were looking for before Thanksgiving. So I gues I'll post and you can use for Christmas dinner.
I will say that the recipe is called "Kentucky" Sweet Potato's
3 cans (1lb 2 ox size) Sweet Potatos
1 cup Sugar
1/2 cup Butter
2 cup Mini Marshmallows
1/3 cup Bourbon of your choice
1/2 tsp Vanilla
Preheat oven to 350 degrees
In sauce pan heat sweet potatos thoroughly, stirring frequently.
When completly heated drain and mash.
Add sugar, bourbon, butter and vanilla mix until well blended.
Put in 2 quart baking dish and bake at 350 for 30 minutes or until heated through.
Sprinkle marshamllows evenly onto top and heat until golden brown.
Very simple, and usually everyone loves.

Mr. Smoker, did you follow the above (or rather did she) or my first post? we followed the above and it was great. My first post was too general. Key is to go thinner on the sweet potatos (since they have a harder texture) and thicker on the apples (so they don't mush right away)
