Hello fellow pitmasters. I just wanted to introduce myself. I'm Vance. I live just south of Dallas, Tx. Place called Midlothian. I've smoked a few things on my bandera, but still a rookie. I appreciate any comments any of you may have for me, and will do my best to help my brothers in arms if you call on me. Thanks to all those who have already given me some advice on my pork butts for this weekend. Smoke 'em if you got 'em.

Hey Vance!

Welcome to the group! I'm sure that you will get all of the tips you could possibly handle here. Probably get quite a few laughs too. So if you have questions, ask 'em. If you have tips or experiences, share 'em. And when possible, post picuters. WE LOVE PICTURES!

Welcome again!

Mista

Vance, This is where the Welcome's are official, so Welcome Brother! If you've not done so yet, let me point you in the direction of our 101 document (link on the home page and in files section). A firegrate mod and baffle will shortcut you past a lot of hassles and let you concentrate on cooking.
Great bunch of Q addicts here who are always ready to help, you might even find something to laugh at from time to time. Pull up a chair and your favorite beverage, we welcome all who share our passion for Q.

i still can't find and expanded steel for that mod.

Also try Ace or True Value Hardware stores or do a yellow pages search in your area for "metal fabricators" or "steel"

Vance, you got the "right" side if you're  not close to Brian!

Welcome my new brother! Lots of great info here! Seriously consider the modifications to the Bandera, they make ALL the difference in the world. Take it from someone that came here looking for answers and found them, and a home...... :D

Welcome Vance ! I know you will have fun with this. As for KCQer let me know what size expanded metal you need and I will send you a piece. I keep it in 4' X 8' sheets and will cut it to size for you.

Welcome Vance. You are in an area with lots of good Czech sausage makers. My favorite one right now is Slovaceks. And if you haven't tried one yet, throw on a sausage log next time you cook. We call it a fatty. 3 hours later you will understand.
