Hi All,
I have been Grilling for years, really got into BBQ and smoking this summer. Like alot of people in the country I'm definetly on a budget. I have a Uniflame Kettle with a Sheet medal Mod I insert for indirect cooking. Works great for Ribs....I bought a Maverick wireless Temp. monitor. Turns out where the meat was , there was a 25 degree difference then my dome Thermometer. Made a huge difference. So I wanted to dive right into a Brisket. Could only afford an ECB. Started out researching Mods. Thats when I found this site. Lurked for a couple of Months. I like to tinker and have found out making the mods I have found online, its like learning how AirFlow,charcaol,temparature all work together. Like Math, anyone can use a calculator but if you learn the basics you know the logic behind it. It has been fun. Ultimatly the WMS is on the wish list. My first Brisket I cut into 3rds for practicing. I did Ribs on the top rack Brisket on the Bottom. Simple injection for Brisket and Dry Rub for Ribs. I got a small "TableTop" Kettle that I use just for Charcaol now in the ECB. I Like to Smoke a little high between 275 and 300. After 6 hours both turned out pretty good still learning. Next I did a Turkey 2 weeks ago. I used Alton Browns Brine recipe. 4 hours on the ECB then wrapped in Foil put in cooler for an hour. Awsome Turkey.
Sorry for the long post. Just summed up my Summer. I didnt want to become life long Lurker.
I also have a 4 burner Gas Jenair my neighbor gave me. Good for Weeknight grilling.
Its been a really fun Hobby.
