Hello Brethren,
Just wanted to say thanks for putting such great information up on the Bandera. I just received a Brinkmann Smoke King Delux as a wedding present and I can't wait to get it up an smokin. Thanks to Bandera 101 I now have a whole list of mods I need to make.
I've been smoking on a my weber kettle for a couple of years now so I'm very excited about making the jump up to an offset smoker. If anyone has any specific ideas or tips for getting a Smoke King up and running, let me know.
Looking forward to some great Q disucssion.

Welcome Brother..I would follow 101 instructions..season it ..burn some paint off :shock:
The Biscuit Trick will tell you where the hot and cold spots are and they are cheaper than meat
Wood burns hotter than charcoal so be aware of your temps....or you will feel the power of the darkside :twisted:

Khinkali, the two most important mods are elevating the firegrate and the baffle mod. The BSKD isn't quite as easy as the 'dera on the firegrate mod because the Brinkmann lacks shelf supports in the firebox. You can use bolts as legs (stainless, galvanized emits toxic fumes and shouldn't be used in a smoker), support the grate on firebricks etc. The idea is to move the fire up in the box and create additional ash room and permit better air circulation to the fire.
I would recommend using the factory setup for your seasoning burn and follow the manufacturers directions for that fire. Most members here report peeling paint from the firebox lid. I've had my Brinkmann 7 months and had many fires in it and the paint is still very much in tact. I credit this to having a cool initial fire low in the box. Make sure to wipe down all surfaces inside and out with vegetable oil and have a fire. Don't worry if you can't achieve the high recommend temp at the end of the cycle. It's also probably a good idea to get a cheap oven thermometer to put in the cookbox to check the door thermometer. Most all are off, mine by 70-80 degrees.

Wedding present? Up and smokin'? Son, there's other things you should be doing, so put the smoker in the garage, we'll see you in about 6 months! ;)
