Hey, great forum. Already drooled on my keyboard reading about fatties. Just bought a Traeger Lil' Tex (sadly, still not assembled) and ready to get it fired up. Tired of dry jerky from my Luhr Jensen Little Chief, I was looking for a little more control. I have a Char-broil gasser and Blue OTG. We filled our freezers this fall with 1/2 a steer and 1/2 a hog, plus I just dropped a buck and have an elk tag. Somehow, I need to do something with all this meat. Can you help me?
