...since I cooked a contest on anything other than an FEC 500, but logistics dictate that I'll be cooking 'Degaque on a couple of BGE's. I started (and walked a few times) with a stick burner. Been practicing a bunch on the egg. Any words of advice?

It's like falling off a horse (which I have more than enough experience with, maybe that's why I hear all those voices).
If you have both the time and means, do a practice cook or two. I wouldn't change any of my recipes from the FE. My gut tells me if you can keep the same temps you should be fine.
