Hello. I just got a "new" smoker and was looking around for some good hints and tricks and found this wonderful site. I have spent 2 days reading and filling my head with some great information. Now it is time to introduce myself.

I have actually done some smoking. I started out with an Alton Brown/Good Eats clay pot smoker. My plan was to use that while I learned the process and looked for my next step. Well the step finally happened. My brother in-law upgraded to a larger smoker so handed down his Smoke Hollow Wagon offset smoker/grill. Now I am anxious to start smoking with the big boys.

I do have to take a moment and thank everyone on here already. There is so much that I have learned already from reading what everyone has posted -- So THANKS!

Welcome, sweet free equipment. Soon you will curse the SOB for getting you started as your back yard and garage fills with smoke and toys! Not to mention the wife complaining about the amount of BBQ in the diet. :-D

That's the great thing about this place Xiadix - there is a TON of information free flowing in both directions. Keep us posted on what you are up too. As a "newbie" to smokin' meats and such - always looking for good ideas.
