View Full Version : Reheating babybacks on the grill

Gonna smoke 6 slabs of BBs tomorrow to be reheated at the Falcons vs Rams games on Sunday (15 year season ticket holder for the Falcons thank-you-very-much).
Question: What is the best way to reheat smoked ribs on a charcoal grill? I'm thinking of just slapping them on the grill till hot, then basting with my sauce. Last year I kept them in foil and that seemed to work also, but anybody have any better ideas?

My opinion would be to start out in the foil, then remove, baste and finish.

Agree with Mr. Kick. Usually like to finish wet ribs over moderate high heat to carmaliz <sp?> the sauce just a bit. Enjoy the game, after Ivan you folks have earned it!

Agree with Mr. Kick and Jorge, reheat in foil, finish with sauce over medium to high heat to caramelize the sauce. Go Rams!

Great thread Saiko! I was going to ask a similar question but I did a quick search and woalla (sp?).
I have a few more specific questions since I will be smoking 3-5 racks today and will be re-heating them tomorrow afternoon for a neighborhood block party. My plan was to reheat them either in the oven or BBQ then bring them down to the block party and have the guy toss them on the grill to caramelize.
1. So how long do you reheat for when foiled over a moderate heat in the BBQ?
2. If using an oven with the ribs foiled what temp is good to reheat them and how long?

For vending or large parties I cook ribs to about 80% and then cool. I reheat on a grill as thery come up to temp I glaze. The ribs do tenderize during the reheat without becoming mushy.

I'd have to agree with the masses here. Keep foiled, reheat over moderate to low heat, unwrap, sauce or baste, then "candy" the BBQ sauce--aka caramelized.

Be sure to add some steam or you may dry them out. I just got a birthday rack in. Those are the instructions from County Line in Austin.

I did six racks the weekend before last and reheated three of them last night in the oven, foiled, while my wife and I were out for an hour-long ride on the hog. Although it was a good use for the time we were gone I won't do that again. I believe that might have been a good first step, but I should have put them in the 'dera and opened up the foil. Oh well, live and learn!
