lookin for brisket chili recipes, I've got a point in teh fridge i'd like to use for it, cubed up. if it involves doin it in the 'dera in a dutch oven while smoking 2 more briskets, all the better.

Chop brisket, throw in crock pot
use a packet of low sodium New Traditions chili mix (medium heat)

Cause some folks just plain like it that way. Hell some people put spaghetti in it. Personally I like mine with beans and rice. Some of us poor folks can't afford a whole lot of beef so we add other stuff to make sure everybody eats.

I throw in whatever I got.
Wouldn't think twice about adding corn either. Las time it was black beans and pintos. Awesome.
Only needed about a pound of meat but still made 5 quarts worth. I agree Mista, add whatever you like (I'll add a handfull of rice or tiny pasta if it is too watery.)
And Horn, serve it over spaghetti.

Brian, you would never know its there, its a thickener
I've used scoop of instant potatoes to firm up chilly as well (same with beef stew thats too watery.)

alrighty, here's the mix,
2-3-4-10? lbs of chopped point brisket
2-3 cans of ranch style beans
2 cans black beans
2 cans crushed tomatoes
secret herbs and spices
some crushed dried peppers of a few varieties,
and let the drippings from the other 3 briskets i'll be doing fall into the pot.
Now, when doing chili or beans in the dera open like that, should i still have the water bowl in the bottom of the rig?

Assuming those are 16oz cans, I'd think 3-4 pounds would pack it nicely, add water if needed
I usually do still use the water pan, mainly because I think it would burn more to the side of the pot, with all the natuiral sugars in there.
Just my opin, others use it more than me so can chime in with better advice

I would still use the water pan, since it will help maintain even temps.
I don't think the chili pot would help maintain temps all that well since it does not have a large volume of liquid.
Also like Bill said, the water pan could help prevent the bottom of the chili from burning.

I found that smoking peppers throughout the summer and pureeing them then freezing them, makes an awesome chili base for use throughout the winter... I also like to smoke (drunken) a couple of chickens and make white chilil or verde chicken chili....
Mmmmmmmmmmmmmmmmmmmm. Chili..................

Another thing. I have always been a fan of throwing whatever I can find into my chili - eg. beans, corn, corn meal, etc... However, I have made chili with a cubed flank steak in my Texas skillet and no beans. Man, a no bean chili is DEFINITELY worth the try for those who have never done it.... Mighty fine eats....
I like to smoke a "combo roast" to use in chilli.

Sometimes I slip veggies in the chili because MrsMista won't eat enough of them otherwise.
Carrots, bell pepper even Spinach. Chap it up fine enough and they never know it's there.

Little over a year ago I heard/read that celery takes some of the gas out of the beans, been putting a rib or 3 in the chili pot since. It works and adds a little something flavor wise to the mix also.

Where were you yesterday when I made this big pot of Pintos?
Usually when I cook beans, I boil a pot of water and add the beans to the boiling pot. I let them boil for two minutes then I cover them and remove from heat. After an hour they will be swollen and fully soaked. I pour off the water to get rid of gas and add fresh water. Then cook like you normally would.

Didn't cross my mind until you mentioned the veggie mod. I do the water change thing too, I love a good pot of beans but they have the maximum effect on me, gas that would have assured me rapid advancement in the nazi party, so I do what I can to minimize the gas. Beans, chili, etc are cold weather foods for me, so haven't made either since I got the smoker. Can't wait to try some pulled pork in a pot of beans, brisket in chili or a chuck rubbed with chili powder or cumin just for the chili pot.
Fark, now I'm hungry. :wink:

holy fark! that stuff was good, about half a cup was all i could handle with the thickness it had. gonna freeze the rest or dilute it a little bit. I think it will make great chili burgers though. was about the stickness of peanut butter!

Y9ou know that bone along the top of the spares that you cut off to make St. Louis style ribs? Smoke that and add it to beans or collard greens or green beans. Adds great flavor!

I suppose there's something to be said about it going in and coming out the same color and consistancy. BTW the main reason for adding beans is so about 10 bretheren can sit around a bonfire most of the night and see who can rip the biggest one without messing themselves.
