I am planning on surprising my wife this weekend by cooking her a romantic dinner. The menu so far is smoked fish. Okay I admit, I don't do side dished too well. She is on the Atkins diet, so I can not use potatos, or rice, or any other Carbed food. Salad on menu as well. What goes good with fish? Usually I tell her what I want to smoke, and by the time I am done, she has prepared any side dishes we have. I am ipen to all suggestions.

What kind of fish and how are you going to cook it?
I have a PDF file that is a Low Carb recipe book. I will have to e-mail it to you if you want it.

Grilled veggies.

Make fairly large chunks of onion, red/yellow/green peppers, eggplant, zuchini, yellow squash -- toss with olive oil and salt and pepper -- then grill them (I find a large grill basket or perforated grill sheet works bets) -- alternatively they can be cone in the oven at about 400 degrees but the slight char from the grill really makes them good.

This is a South Beach recipe so it is carb friendly

don't forget fatties.

Monday night, halved a red bell into 2 "boats", deseeded, added a ground smoked sage fatty, mozarella on top, onto the grill fro 10 minutes.

Made an awesome side, or even a whole meal, and fish could be the side.

If not DF's grilled veggie medley is another we do couple times week.

You could also make a grilled fruit salsa to go with that fish.

Grill off some mango and pineapple. Or use any fruit you may think will fit the bill, peaches, apples, pears...

Allow the fruit to cool. Then cube the fruit, add to some chopped red oinion, garlic, fresh cilantro and some lime juice. You can add any citrus flavor if you do not like lime. Orange, Lemon, tangerine, pineapple etc...

If the mix is to tart sprinkle in a little bit of sugar. That should get you square on the fish.

You can always do some slliced grilled beef on that salad if you think you need some more meat in this dinner. If not then keep the salad simple. Or, kick it up by making a nice vinaigrette, possibly a tropical style one and using some fresh mango, papaya, possibly a few roasted nuts (macadamias), if you can have cheese crumble some gorganzola, maytag cheese.

Do not forget about the drink. Possibly go pick up some Champagne, some raspberries, and framboise liquor. Place the berries in the bottom of the glass, pour in some liquor and top off with the bubbly.

The grilled veggies are a great idea as a healthy side.

Oh yeah, do not forget about dessert. Are you going to splurge or stil remain healthy? Wanna delve into that?

Dessert is never a preoblem around here. One of my daughters is taking a cooking class on desserts. Her plans is to open a pastry shop. My job is loving it, they get most of her homework. But the other tipes are great.

oysters might help a little on the romance side of things...(nudge, nudge,
wink, wink, say no more, say no more)

dessert should be chocolate syrup, drizzled onto her abdomen, licke....you get the idea.

The Main Dish will be Salmon, will now need to decide on just how I will smoke it, but that is why there are recipes. Thinking about a mix, of fatties and smoked jalapeno peppers if I find some good enough in size. The salad with smoked veggies, and thin sliced smoked beef. Still looking for something to put on the plate to go with the fish. She says she is getting tired of all the BBQ, I need to save my baby, before it gets locked up in storage one day while I am at work.

racer....here to tell you the oyster thing is a myth....we went out to eat the other night and I got a dozen oysters on the half shell thinking the same thing you did..got home and only 8 of em worked...not all they're cracked up to be... :lol: [/code]

Pulled the Weber Ketter out. Grilled the veggies, and marinated the salmon in a honey mustard sauce. Wife was outta town visiting her mom, so all was ready when she got home.
