A still was going to be my project this year. Somehow I think a one-week-aged bourbon won't taste too good ... except maybe next to tofu bacon. I have a very nice stout that is lovely with bacon, but it is awfully warm to be drinking it.

For this week's entry, I entered Kucklhed BBQ’s turf in Montana to get a bacon fix in Glacier National Park.
I went with a family favorite recipe: bacon-wrapped prunes. It is one of those simple yet unexpected combinations that almost doesn’t make sense until you try it—and then you are hooked! You get the crispy salty flavor from the bacon melting in with the squishy fruity goodness.

Being at a national park campground, we set up a firepit to keep things on the up and up. The Rib-o-Lator was the tool of choice for this and the wood was a mix of cherry and maple.


I hope that you all won’t mind that we also added on chicken wings done two different ways as we were doing some experimenting.

I tried this bacon-wrapped prunes appetizer with two different styles of bacon: thick dry-cured and regular thin stuff. While the photographs look better of the thick, we all agreed that the thin stuff worked better for flavor. The bacon and prunes integrated better and there was a better crispiness. Won’t stop me from posting the pic of the thick stuff for the TD, though. Here’s my entry:

Salted, seasoned and cured. Check.
Not smoked but a few types of American-style bacon are not as well.

I personally think of it as Italian Bacon and would welcome it and Canadian Bacon in the throwdown. But the voters will decide...

To me, it is "real" bacon. Now, I'm not being nasty here, but pointing out an observation from somone who has travelled extensively and has a vast knowledge of regional culinary preferences... American store bought bacon, (Oscar Mayer / Hormel etc.) is not real bacon. Pancetta, Prosciouto etc, is real bacon.

Having said that, I do really like American Bacon... do not take this as a personal affront to the American People...

But watch out! The California Dried Plum Board is coming for you. They quietly changed the word Prunes to Dried Plums in 2009 to "improve their image". You have violated this change and they will come attack you in their golf carts.

I found this so very annoying. Of course this is a complete lie. Prunes and plums are different fruit, and usually I will choose a fresh prune over a fresh plum. A dried prune is not a dried plum (until they farkin' changed the name). Of course it was all image, prunes being associated with what old people ate to get "regular". Thanks Jonny for calling them what they are.

OK, this is my first entry, so go easy on me. My photos won't be quite as crisp as some of the others since I am using my phone, but I think they turned out all right. So, without further adieu...

SMOKED BACON N' BROWN SUGAR BELGIAN WAFFLES

I prepared some thick cut bacon by sprinkling on a generous portion of brown sugar...

Then it hit the smoker for roughly two hours.

I gave the bacon a rough chop then added it to the Belgian waffle batter.

After stirring to combine I fired up the ol' reliable Villaware waffle maker and got to work. After a short, but excruciating wait, the waffle was done. I finished it with a healthy pat of butter, a drizzle of real maple syrup, and a dusting of powdered sugar... just in case the brown sugar glaze on the bacon didn't make it sweet enough.

The only worthy side dish to a smoked bacon 'n brown sugar Belgian waffle seemed to be more bacon.

Then came time to put it all together. I placed both "scoops" of Scotch eggs into the cone, drizzled some BBQ Sauce, on top and then added some Pig Candy sprinkles. (Use Second one Down or Bite one for TD entry.)

I wasn't sure what to do for this throwdown other than I was thinking desert for some reason. Well I had a couple of hours to myself this morning and here is what I came up with.

I started with a banana, peanut butter and some bacon

Peeled the banana, cut it in pieces, spread some PB on the pieces then wrapped in bacon

They were actually much better than I thought they would be, they were actually really good!
The fluff could be very good, I was thinking of next time, yes there will be a next time, that a drizzle of honey in the last half hour or so would be good too.

Surprisingly no it didn't. I think I had two things working for me. One, I used natural PB, you know the stuff that separates and you have to mix in the oil when you get it. Two, it was down near the bottom of the jar and I can never get that as well mixed as the top part so the PB was really thick.

I started to think about an entry for the Bacon Throwdown.

Last week on Friday after the Bacon Throwdown was announced, I stopped by the Asian grocery and picked up a slab of pork belly. I got it into a maple & brown sugar cure. I pulled it out Thursday and rinsed it and set it back in the fridge to dry overnight. I took advantage of some unusually cool weather and smoked it at 150 degrees for 5 hours Friday.

Tomatoes are just at their peek here in Wisconsin, so I immediately thought of a BLT. But after the Big Bacon Breakfast, I knew I had to kick it up a couple of notches. I headed off the farmers' market and picked up some sour dough bread, beefsteak tomatoes, and leafy green lettuce.

So I guess you need 5 things to make a BLT: Bacon, Lettuce, Tomato, Bread, and mayonnaise. I've got everything covered except the mayonnaise. What is mayonnaise? It's just a fat emulsified with an acidic liquid via an egg yolk. Well I look in the panty and I've got vinegar; several types actually. And I have eggs of course. For the fat... wait a minute. I have that jar of bacon fat in the fridge... It's almost liquid at room temp. Maybe if I warm it to 80 or 90 degrees it will be liquid enough to make mayonnaise... Not Mayo... BACONNAISE! Yeah that's the ticket. Which vinegar? How about malt vinegar? Yeah, that will go perfect with the smoky flavor of the bacon fat.

So here we go. I use the stick blender to whip up the baconnaise. I fire up the ProQ to grill the bacon. You really need at least 2 stackers to grill bacon and keep it above the flare-ups. I fire up the kettle to grill the tomatoes. After the bacon is done, I toast the bread on the ProQ. I also wrap some bacon on dowels to make bacon straws for the Bloody Marys. And throw some bacon chunks, cherry tomatoes, and lettuce together onto toothpicks to make “BLT Bites” to put next to the Big Bad BLT.

To make the BLT: spread the baconnaise on the bottom of the bun; add a layer of leafy green lettuce; and some lightly grilled tomatoes.

Then pile on the BACON!

Top with another drizzle of baconnaise and then top with the top of the bun. Put it on the plate with the BLT Bites and serve with a Bloody Mary garnished with Bacon Straws and Lettuce (the BLT theme again)

I don’t normally put anything on my steak, but I had a vision of a bacon steak sauce and so I decided to try it… I couldn’t keep my daughter out of it! She wanted to (and did) eat it with a spoon outta the pan… kids! :rolleyes:

It looks a bit like barf in the pic, but it was pretty tasty, had great bacon flavor too!

I hadn’t done bacon wrapped corn or zuc before, they were both awesome! Although, zucchini HATES being wrapped in bacon… it sheds it like a dress on promnight.

Been a long time since I'd had one of these so I figured I try the grilled approach. First I halved and cured a small butt. Smoked it off and sliced 'er up. Then grilled up some cinnamon French toast out of some crusty bread slices. Loaded that up with Swiss cheese and grilled Buckboard bacon. Drizzled that with a bit of homemade blackberry syrup and a slight shake of powdered sugar, and we were livin' large. Thank you for looking.

So I was giving this Bacon throw down some thought, came up with an idea at last and then I saw N8man's "Pig Newtons". Well that was that, all I wanted to eat from there was one of them and so I almost didn't do anything. But my husband is an encouraging sort of fellow (or maybe he just wanted to eat more bacon) but he said I should try my idea anyway so....... for this throwdown, I also decided to do a sandwich. I picked up some pie irons this summer and have been dying to use them. The last time I tried them, I was knee-high to a grasshopper. I decided to make a cheese sandwich with bacon and red pepper. There was already a fire going in the Oval, so I decided to use that. I loaded them up

Well Mrs. Blk (soon to be) said she'd help w/ the bacon TD so we came up with a plan and went to work. First we (she) made a pizza "crust" out of a Bacon weave and thru it on the UDS. Then I took an old strainer, cut off the handle and covered it with a Bacon weave. Into the UDS it went. Then I got the weber out and started a full chimney of coals, dumped them on one side of the kettle, added grill grate and CI w/ oil. Took out the Eggplant, sliced it up, gave the slices a egg/milk bath and coated with flour, corn meal, and Yardbird. Into the oil and then into the Bacon bowl! When the "crust" was done, we added sauce, cheese and Canadian Bacon. Pictures below...

Well, I found this whole Throwdown very confusing. I thought I knew what "bacon" was but apparently what I've been calling bacon is not bacon. I decided to submit a politically correct entry, that includes all the bacon I could think of (so as not to offend anybody):

and then I went to therapy. Turkey bacon? Tofu bacon? Canadian bacon? Sure why not. Proscuitto, ... sure, I'm not fussy, I've got it anyway. However, after smelling that vegetarian bacon my appetite was ruined for the rest of the day, ... or at least until my wife made me a nice little inside-out bacon sandwich for dinner. Yum, now that was some real bacon! Oops, back to therapy. So, my do-it-yourself art therapy suggests that I express myself through art and this sounded reasonable. Personally, I like doing collages. It's what we learn in second grade and I figure I can still give a second-grader a run for his money. But first I needed a suitable color palette. I created this on the grills
