View Full Version : Saturday mornign smoke
Beautiful Saturday morning in southwest Michigan, sunny clear skies, 55 degrees with a forcasted high of 73. Have the 'dera loaded with a 6# brisket, two fatties, with my Italian Beef experiment goin in in a couple of hours. Time to go out on the back deck enjoy some coffee and watch that thin blue rise into the trees.

Cloudy and threatening rain but the brisket has been on for about and hour! Experiment for competition and supper tonight!! :D
Brisket is seriously STUCK at 145! Fire is staying good but I've even moved the probe twice to make sure it's not messed up.
Sheesh, thank goodness I know that once it does start moving it'll finish up pretty quick.
Still cloudy, sprinkling rain, t-storms in the area.

For laughs last night, I ordered a BBQ beef sandwich from an "New York" style pizzeria. Farking beef was pink. Not pink as in smoke ring. Pink as in a pink bbq sauce (tasted like Arby's).

Sounds like me on Thursday! Then BOOM, she started going up and climbing, and I opened up the smoker again to make sure I hadn't run the probe all the way through!!

Chilling at work, reading the forums. However, I did have one of my kick arse pulled pork sandwich on a potato roll with slaw. And of course I had one of my signature spicy mustard carolina sauce on it! <--the one of three sauces I have yet to get to my complete satisfaction. I think I almost have it where I want though! Just a few more tweaks and she will be a keeper.
By the way I wish I had packed two of those sandwiches because after reading over these forums I am hungry again!
Just sitting here in the afterglow of a damn tasty brisket with my budy Jack O'Daniles on ice. I do need to get one of those Nucor thermometers though. Brisket turned out very good. Point wasn't spreadable like Phil's but it wasn't a Kobe either. Picked it up at Sam's club. When I went to buy it their weren't any in the case so I asked the butcher where the briskets were and he said they just unloaded them off the truck, couldn't keep em in stock. Seems everyones buying brisket these days. I told him must be the Brethren. I'll slice up the Italian Beef experiment tomorrow after a night in the fridge and let you know how it turns out.
