Does anyone have any experience with plum wood. What meat is it best suited for and what kind of flavor does it have ( mild, strong, bitter, etc..)

Plumb is mild in my experience. I'd use it on fish or poultry or ribs or on anything else...its good fruit wood. But that's just my opinion, your mileage may vary.
