View Full Version : Food TV Show yesterday-Memphis BBQ Place

Yep I saw it....Long time Q place in Memphis...They dont have any sauce on the menu only serve on persistent request from it to "visitors" who never been there before.

The owner claims no sauce needed because of the the long time dry rub they use on their ribs. They shared the rub recipe and their real secret..... :shock: Hickory Wood water soaked for 24 hrs and lots of hickory soaked leaves..... Go figure....the owner said they believe in lots of smoke. Said that he was on the BBQ competiton circuit and serves his customers the same way he prepaired Q for the judges. They know when the ribs are done by lifting one end with tongs and the rib breaks down in the middle without falling all the way back to the rack.

Any one else see this show? It was in process when I tuned in so I don't know the name of the place. My brothern law lives in Memphis and I wanted to ask him to give the place a try or ask if he ever ate there.

didn't see it. Was it Charlie Vergo's Rendevous?? Great atmosphere and entertaining wait staff, the ribs are done dry and were ok. The best part was standing out back waiting in line with a beer at the alley entrance smelling the smoke blowing out the vents. Corky's is another place I've been there ...its pretty good.

Sounds like Rendezvous, pretty good stuff. They have a branch restaurant in the Memphis airport if you're ever passing through there, terminal B. Corky's is crock pot tasting crap.

HickoryNut... My experience at Corky's wasn't that bad. It WAS of the falling off the bone, gooey variety...and I preferred the Rendevous Ribs, although they were VERY dry.

All in all, I prefer the texture of my ribs to either of them, but they both taught me something about flavor. :idea:

the name of the place is central bbq and if you go to foodtv.com you can click on bbnq with bobby flay and get tht recipe

Here is the recipe for the rub.

Rib Dry Rub Recipe courtesy Central BBQ
See this recipe on air Saturday Aug. 28 at 7:00 PM ET/PT.

1 tablespoon cumin
1 tablespoon paprika
1 tablespoon granulated garlic
1 tablespoon granulated onion
1 tablespoon chili powder
1 tablespoon brown sugar
2 tablespoons kosher salt
1 teaspoon cayenne pepper
1 teaspoon black pepper
1 teaspoon white pepper


Combine all ingredients in a large bowl and mix well. Store in an airtight container. Pack on the dry rub onto your next rack of ribs.
