View Full Version : What my son asked me.

When I was doing my last cook my son asked the following questions.
1. Why did you just spray the meat?
2. What is in the bottle? Apple Juice. water, whiskey
3. Could you use anything to spray?
4. Is it done yet? :D
I have to be honest, I don't really know the answers to some of these. 1. I spray the meat to keep it moist and juicy. 2. I know what I put in the spray bottle. 3. I don't have a clue what else I could use. I read here about the apple juice/whiskey combo and never gave it any other thought. 4. For the last time, the food will be done, when it is done.
The real questions I am thinking about is what else to use in spray bottle? I have done cooks without the whiskey or any alcohol in the bottle. I did one with just water, got to admit I can not tell the difference, but my taste buds are screwed up royally from smoking too many cigs. I may have been wrong, about question 1, but it made him think I knew what I was doing.

I add liqueur to my spray bottle. I would suggest a fruit flavored liqueur. A coffee flavored one might be interesting. Experiment!!!

I mainly use apple juice mixed with olive oil and worchestshire sauce, but have used lots of other stuff too, like: water, wine, 7 up, crannberry juice, flavored syrup, beer, soy sauce, hot sauce, a runny vinegar style of bbq sauce, all types of spices ( carefull not to plug sprayer).
I almost always mix a few things and fill the rest with apple juice.

I spray everything, not so much to keep each piece of meat moist but to raise the overall humidity in the smoker.

Good info, Midnight. I am glad Iceman62, brought this up. I would assume you have different sprays for different meats right?

I spray everything. I usually experiment with whatever is handy. Wine, Flavored vinegars, Soy sauce Worchestershire, Juices, Beer, Liquor and any combination of the above.

I usually spray everything. I like to use fruit juices (apple, cherry) and burbon mixture.
It seems like Albersons has had 10 for $10 deal on 1 gallon apple juice for a while now. I just keep restocking when it goes on sale.

Use a mopon brisket now and then. Simmer some onion, garlic, whole pepper corns, and other seasoning of the day in some beer. Cool and pour into the bottle. Works the best when I have to squirt the dogs to keep them away from the smoker :D

I started out using 100% apple juice, but lately I've been getting better results using a 50-50 mixture of beer and apple juice.
I also use a 50-50 mix of apple juice and water in the water pan, or water with 4 pears cut into slices. I like the aroma, doubt that it flavors the meat any.

I use 1. black cherry soda and apple juice 2. root beer and apple juice, apple juice with anything works. I used molassas, dark beer, dark brown suger and AJ one time and it worked really well. Thats more like a glaze though

My horizons are expandng-along with my waist line
I use a lot of Apple Juice and Southern Comfort. Nice sweet flavor and a nice crisp bark/glaze.
But, gonna venture out some!
Great thread!

After a cook with some dry meat. I spray everything there is on the grates.
