I've got some spares and a butt in the sweet blue...just taking a break to let y'all know. pretty soon the beer will start going down. can't start too early in the cook...or i'll be done BEFORE the butt!!!
only using mesquite...man it's hard to keep that stuff at 210-220! that stuff burns HOT.
anyway, what about you guys, what's on the sweet blue in y'all's backyard?

I've got about three dozen chicken leg quarters been brining all morning and I'm gonna try four 321 fatties. My hickory has been in the hot sun all week so it goes "chink" when you whack it together.
Two pork butts - one brined the other not - trying out a new rub on both.
Chicken thighs will be going in soon and then will be grilling some chicken a bit later, too.

I found Babybacks for $2.99lb. and i'm stocking up the freezer. I'll do six racks tomorrow and may have them three or four times a week. Good chance to experiment at that price. Clear skies and the wind at your back Brothers.
I just pulled the smaller of the two pork butts off the ECB and into the cooler. The larger one has about 10 degrees more to go.
Trying an experiment with the chicken parts 1-1-1 -- right now they are in foil and about finished with the second -1-. I'll sauce 'em up and let it thicken they pull and enjoy.
I'll be firing up the gas grill in a bit to do the grilled chicken.

I just put a pineapple upside down cake in the Dutch oven, piled hickory embers on the lid and set it in the smokebox. This should be interesting.

Guys...i don't kow WHAT i did wrong!! i smoked my butt for about 5 hours, wrapped it up, put it back in and when i pulled it out about 4 hours later, it was dry as hell and tough! man that pissed me off. i think maybe i just over-cooked it. i don't know. hell i had to save the evening/night by throwing in some bacon and jalapeno wrapped dove breasts, and then i grilled some fajitas. this is the first time this has happened to me with a butt. i was so disappointed. oh well, i guess it happens to all of us at one point or another.

How big was the butt? What temps were you ranging in?

TEMPERATURE Brother! Not TIME!!! both meat and chamber.. you may have been cookin at to high a temp..
Cook at 225...... Wrap at 165, bring to 180-190 for slicing, 195-200 for pulling. Let em sit in the cooler for at least an hour.. Were you checking temps?? What were they?

that's where i screwed up i guess...i didn't check my temps. my therm went tits up, and i was trying to wing it. believe it or not, i have winged it before, and the butt came out perfect. oh well, time to go buy a new therm.

I've been smoking all day. Fatties were off and eaten hours ago. Ribs came off a little while ago.I still have 6 butts wrapped and waiting for 190ish, depending on my mood. 40 pounds pulled pork. mmmmmmmmmmmmmmmmm.

When I get off work in a baoun an hour, I'm gonna put on 6 racks of spares and about 10#'s of yardbird thighs for my father and his friends. I might just throw on a coupla fatties just so I will have something for breakfast tomorrow.
