Everytime I've done smoked chicken, someone has said this to me. I know it's cooked properly, the themometer says it's done. Just eat it and shut up.

What a great post-
I had most of my old Beer butt chickies "rejected" by family and friends cause of the "red" by the bone.
Then I realised that Bandera has a water pan, I sit chickie right on top of it, so why add direct moisture?
Used the can holder without the can. Wonderful :lol:
Done, moist, and tender right to the bone and "red crap" was gone.
I am sure that the can was blocking the heat.
