As the story goes, Saturday night during the first Battle of the BBQ Brethren in Sayville, my wife, my sister in law Ruth, Clint and I were sitting at our site shooting the breeze when this character walks into the site and sits down. I turn to him and ask him what he wants and he says, "I am not feeling so good, I just need a place to shoot up". Clint turned to me and said to me, "who's that?". I looked at Clint and said "it's a junkie looking for some place to get high". Clint got up and escorted the guy away.

My team consists of my father, uncle and myself. Since my father and uncle are a little older, they are complaining about sleeping over on Saturday night.
I can't understand why they would rather sleep at home, in their own beds, in the AC, rather then on a zero gravity chair, in a parking lot, in the middle of August.
Are team members allowed to leave on Saturday night, sleep at home, then come back early Sunday morning?

Sure, why not.....We have had members of our team stay in a hotel before. My brother and I stayed to tend the cooker so the women folk could go to sleep in a bed in a nice air conditioned room.

My family refers to me as "The Gentleman Barbequer", since I insist on getting a motel room for any contest I go to that's outside driving home for a nap range. I try to explain that I have simply reached a point in my life where I have developed an appreciation for showers and clean sheets, to no avail.

Hello All......Was wondering if anybody knows any bands or musicians that would like to volunteer there time and talents to play at this event during the two days in the showmobile??? Looking for light rock/jazz musicians. If so please let me know. I have a spot on saturday morning from 11am-200pm and multiple time slots on sunday. B103, KJOY will be at event as well as thousands of people.

Last yeay the sayville page had all the activities etc etc, thats why i asked about a web page....there is no page or list of things going on or whats going to be there.....trying to entice more people to show up and support this event.....also suggested the bake off thing again for the women. to show off there skills. Last year there were lots of people there just to do that & walked around the event...I told alot of females about that contest & there eyes lit up........................just food for thought

The Sayville fall festival, who hosted our event previously, was an established festival with those types of ancillary events already in place. It did not require additional resources to add them in since much of the infrastructure for ancillaries were already there(and volunteers).

The PAL festival is a new festival/fundraiser and our organizer(Richie) has his hands full even with a strong infrastructure already available at the venue. We only got on the calender in late may and he is concentrating on making the event a top notch, cook friendly event and one that the public will enjoy also. There will be bands, craft fair, bouncers, horse rides, and the buck a bone contest. No ancillaries this year unless he, or us, can get volunteers to step up and run side events for this year. So if unless we get a volunteer force that can organize and judge, we should save for ancillaries for next year when we have time to plan.

Folk, Rich is out on a family emergency, so I will be forwarding some information as we grow closer.

Everyone Please remember these 2 additional items.

A TARP is required by the board of health to be used as a floor covering for anyone on grass. This is for the duration of the peoples choice only and can be removed immediatly after. We are trying to put everyone on grass(unless requested), since blacktop is nasty in august.

A water container and bucket to be used as a handwash station(again, board of health requirment for peoples choice). Can be as simple as a water dispenser(which locks open) pouring into a 5 gallon bucket. These easy setups are availble in supermarkets(the square 2.5 gallon is lockable in the open position).

Does the tarp have to cover the whole ground or just the area that you're prepping the food? For example, I'll probably be using a 10'x10' space for prepping the meat (the size of a pop-up tent) and my smokers will be under another 10'x10' pop-up tent right next to the first tent. The rest of the space will be for supplies and sleeping tent. So, does the tarp just have to be under the first tent where I'm doing the prep and handing out of the ribs? Just want to make sure I'm getting the right size tarp.

i believe the tarp is for prep and serving area. (But Im in the same dark your in). Probably be best to brink an extra. Richie can has to bring the apps to BoH next week. i will remind him to ask them.

again,, its ONLY for peoples choice and is a Board of Health requirment. Once thats over, they can be removed.


Matt, call rich on monday to see if u can get in early to setup. Im not sure if vendors can get in earlier. theres a craft fair and farmers market going on, so maybe they made other arrangements.. (???)

We had that tarp rule a few years ago at the first LI ICS event. At that time all teams were on gravel and the rule was to have the serving area underneath the table(s) covered with the tarp; the idea being to prevent dust and other stuff being kicked up into the air around the peoples choice chili.
The organizer also provided plywood to set down for teams that had no tarp/ ground cover. (that is probably not feasible for this contest due to the number of teams involved I figure.))

I agree with Smokenstein. The packet says that we can pick up the ribs at 8am. If the serving starts at 2pm, that's only 6 hours to prep and cook a case of ribs.
Is it just me or does anyone else think that might be cutting it kinda close?

Thats more than enough time to do ribs, do you do 11 hour ribs?

i do mine in a WSM, 325*, 2.5-3 hours. gets rave reviews when temps stay high. REAL BAD if they dip. so its risky, but the rewards are good.

I emailed Jeanne last night she said she will get back to me with clarification. She seemed to think the cooks package was a misprint and the originally stated time of 2-4 is the actual time.
I will post the correct info as soon as I get it.

I'm sure that Phil or Rich will chime in with an official response, but I'm pretty sure that it's a dollar per ticket and each ticket can be redeemed for 1 rib.

And for those that are concerned about having enough time to cook all the ribs, if you get one of those gigantic pots that restaurants use you can boil four or five racks at a time.

Good afternoon.....I just wanted everyone to know that I will be opening the gate to the PAL complex sat morn at 0600. I currently have assigned teams to spots and would strongly encourage all teams to arrive at complex by at least 0900. This event will be open to the public at 1100. If there is a problem and you cant or dont make it till later I will probably have to move you onto asphalt. The problems are that this is going to be a very large crowd of people and children...special needs children ....so for safety reasons please put forth your best effort to arrive early. I was told the ribs are 30 lb cases of 2.50's St louis cuts. So at avg 2.5lbs a rack at 30 lbs, your looking at 12-16 racks per case. (troy used 40lb cases and 2.25's).

I've read the KCBS rules, but still not clear on something:

I understand that all meats have to be cooked over charcoal, wood, etc... But, what about sauces? Can you cook or warm up bbq sauce on a propane cooker? And I'm not talking about with the meat in it. I'm talking strictly the sauce. Just wanted to get some clarification on that.

Although Richie is generous enough to be supplying a light dinner for all the teams, I would like to supplement that with the pot luck and team get together Saturday night.

It would also be great(and greatly appreciated) if we can cook some extra so the volunteers that will be helping at the event can get a bite to eat also. These folks will be delivering ice, collecting trash, and catering to our teams, so it would be nioce if we can do alittle extra for them.

I figure pot luck dinner can start at 7:30. (Cooks meeting is at 7). ???????????????

Im making 2 full trays of backed ziti and Sausage and peppers, i know some folks chimed in here also, but many teams are not on the forum. I will be sending an email out to the teams tomorrow to get the rest of the teams involved.... (when rich gives me the list, hint hint).

I've been thinking that smoked sauerbraten might be pretty tasty if it was shredded and served over egg noodles. I'll start it marinating tomorrow.

Anyone have any extra space?

its for saturday night, its a pot luck so bring whatever you want, appetizer, side , dessert whatever ., Its after the cooks meeting

Theres the team dinner setup by the organizer on Saturday, but usually the teams will setup a pot luck and bring other things to it as well.
