After I bought my klose pit, I gave my bandera to a buddy up the street. This weekend is the first shot we have had at getting together so I can help him with his first run. Probably gonna do some chicken parts and ribs. After that, probably on Tuesday, I will fire up Smokey and do 6 butts and a mess of ribs.

I'll figure that one out when it is time, but most assuradely there will be some southern flavor involved.

My guess is Vinegar if he is speaking of South East Flavor
That is manditory an as ingredient to a MOP and or a Sauce.

Its 2pm and everything cept the 6# flat is in the cooler.
Got a 4# pork butt that took 5 hours total. Won't have leftovers, but it was a nice little hunk of pork.
Got a slab of baby backs in there.
Got a 4# pork loin in there too.
Got one more thing, but I'm starting a new thread on it.
Everything but the loin was rubbed down good last night with Grub Rub. I love that stuff. Then wrapped in Saran overnight.
Took my injecter and filled the cryovac with the loin with Dales Seasoning.
Let it sit overnight.
Damn it all smelled good.
I'll let y'all know how it tastes!!
