Im actually doing that class with my wife this Saturday. We are both excited, but We have already done one of the classes by PNWBA earlier this year and we almost decided to do the cascade country cook-off instead but we decided we haven't had enough experience to do the actual competition so we are going to take this class and try to participate in the Oregon state Fair competition (Blues, Brews, BBQ) in a few weekends.

Help!!! I'm trying to locate a cooking class taught by Johnny Trigg. My uncle said there's a week long class that costs $5000.00????? All I've seen is a weekend class for $500.00. Are there classes taught by Mr. Trigg? Where and when?? I'd like to give this as a surprise gift to him.

Rod's class is well worth your time, effort and money (which you will make back during a season). When the class is offered next year make sure to sign up early - they fill up quick.

I'm seriously thinking about taking Todd and Andy's class next time they offer it in the KC area - not only have they done great on the BBQ circuit, they are both great guys.

Swamp Boys Q School happens again this July...summer school has never been so much fun! Stay tuned for particulars and email soon to reserve your spot.

MANY Grads of this class have gone on to win numerous GC's, RGC's, and too many top 10 and category wins to list. People have flown in from TX, NY, NJ plus all of the southern states to attend. This is PERFECT for the newer teams, and there are tips and techniques to be learned for the seasoned teams to help push you to the top as evidenced by the GC's and RGC's.

If you thought about taking one of my earlier classes and didn't, odds are it would have already paid for itself at your next contest or two. Stop putting it off and sign up now. :thumb:

Hot off the heels of another World Championship in Whole Hog (well, kinda hot), we are proud to announce our next class- July 9 and 10 in Hernando MS. We will be going over all KCBS meats as well as MBN products including our Whole Hog. We do not have large classes as we value one-on-one time and hands on experiences for the attendees, so book soon before we sell out again.

I took this class in April. Well worth it. The small class size and the one on one is a definite bonus. The class is close to memphis and there is lots to see there. Pete and Melissa do an outstanding job.

The KCBS Papa Joe's Banjo-B-Q in N. Augusta SC last weekend had a field of 62 teams loaded with talent including all the big names from across the country competing, several you've seen on TV. When all the smoke cleared, Go For Smoke BBQ walked away with a perfect 180 and 1st in chicken, a 3rd in pork, and RGC! A BIG congratulations go out to Rob and his wife Prudence, who both took the last Swamp Boys Q School :clap2:

And of course don't forget Hicktown BBQ who took RGC at the KCBS contest in Rome GA a couple of weeks ago with a 1st in both pork AND brisket! Another first-time RGC, fantastic job in a tough field!

That makes a total of 20 Grand Championships/Reserve Grand Championships by Q School Graduates, including a Perfect Score in FBA and a Perfect Score in KCBS! GC/RGC wins have happened in FL, GA, NY, and SC. This is not a regional class, these techniques are nation-wide.

See my web site for an application

I am interested in attending two classes this upcoming winter but I need them to be in the same general area and back to back weekends. Flying out of AK and don't want to make to separte trips.

Last year I took 4 legs up, myron's and BBQ Institute. The last two where both held in GA last November on back to back weekends which made it affordable. Looking for the same thing this year.

I will be keeping an eye out but if you find or know of something please let me know.

Our state Championship is next weekend, so hopefully I will have some good news to report.

If not back to back classes how about a class and competition. That might be easier to find. Thanks again

By request, I will be having Swamp Boys Q School over Thanksgiving weekend, Nov. 25-26. While the “Black Friday” shoppers are out frantically searching for the elusive sales, we’ll be kicked back under the old oaks in Clermont FL searching for smoke rings. Whether you are a back yard BBQ enthusiast, or a competitive cook team wanting to improve your scores, there is plenty for everyone.

Don’t delay in signing up; once it’s full it’s full. Makes a great Christmas gift. See my web site for details: http://www.swampboys.com/wordpress/?p=480

Hope to see you there!

We have scheduled several new BBQ classes for this winter.

"The Art and Science of Competition BBQ" is a full competition class where we will show you how we won the World Champion at the Jack Daniels World Invitational BBQ contest, how we win an average of 6 contests per year for the last 3 years and have finished in the top 10 KCBS TOY points for the last 4 years.

The Art and Science of BBQ 101 is a hands on class where we supply the meat and you cook it on your cooker at the class. We bring in KCBS judges to judge what you cook that day so you can become involved in the judging process and find out just what they do.

To find out more visit our web site at www.4legsupbbq.com for dates and locations.

We have only done this a couple of times one on one with two other teams and they both have had very good results after the classes. This has been offered to those teams who have supported Hog Fest in Edenton for the past couple of weeks and we currently have 10 teams on the list. We will take 20 paid entries only for this class and the entry fee is $750 and includes your spouse if they would like to come. If you are interested please let us know by emailing us at tarheelfireplace@embarqmail.com (tarheelfireplace@embarqmail.com) and we will send you more info and an application.

Blue Grass,
I don't know first hand about Danny's class (I'm sure it's good), but Bill Anderson of Chatham Artillery BBQ (numerous Grand Championships) has had an online class for several years now that is very good. Many people have won 'Grands' after buying into it. http://www.barbecuecoach.com/amember/go.php?r=295&i=l0
Lots of familier names are signed up to Bill's 'school'. And his lifetime membership is lifetime, when he changes cooking methods you get the new info.

My thoughts on picking a class would be to find an instructor with good communication skills and a consistent, recent winning track record. I have taken a couple short classes where the instructor has not placed high in years and was not a good communicator which lost most everyone in the class leaving everyone scratching their heads.

Folks, I'm back from the Johnny T class and l am VERY happy. The classroom was amazing. We were in a full on professional stage kitchen, multiple cameras with huge flat screens so the camera could show closeups. The kitchen space he worked on was HUGE with the mirrors above so you could have yet another angle. The classroom seating was fantastic with plenty of room for all the notes and food you will eat.

Ok so past the amazing atmosphere.... Johnny is an amazing teacher. He starts off the class on time and makes sure he covers all the questions we have as he is progressing. Any time someone needed more time on a topic he made sure to cover it again until each person understood. He would go over each topic indepth and also the part I really liked is that he would use his real life examples. Johnny's wife was amazing as well, you would see her moving all about in the background keeping everything moving along.

I'd love to sit here and share specifics of the class as many of you may want to hear....all I can say is that it was worth it. I walked away from that class with some incredible nuggets of knowledge. we covered everything... I meant everything..prep, trimming, injecting/not injecting, rubs, too much, too little, what order, no order.... I mean it all. What temp probes, when is it done.. What to take with you when you compete, what not do. I felt like a sponge and I'm still digesting my notes.

I promise you that after taking that class you will have taken with you several "ah-ha" moments. SOOOOOO that's how I should do it.

I highly recommend the class to anyone, you will not regret it.

I signed up to do Silverton, lets see how I do. I've take several classes, cooked more than I can count, made plenty of bad BBQ and some great BBQ too. Time to see what I can do in a competition of seasoned professionals.

I have one goal..well two, have fun and not be DAL

He basically did the four KCBS meats from prep to cooking to presentation.

Told some stories about Pitmasters and gave us a bunch of goodies.

Glad I went!!!

Smoking Triggers BBQ class review...

Arrived at the site (awesome culinary supply store) about an hour before the class started. Had a few moments to talk to Johnny and reintroduce ourselves. We got there early so we could get good seats...front row just to the left of center. The classroom was a fully equipped teaching kitchen...overhead mirrors, video cams and flat screens. We enjoyed a fabulous shrimp gumbo dinner including rice, salad, rolls and drinks. Deffinately putting their best foot forward. The evening went on and we talked about brisket and butt...he prepped both meats and seasoned them as if for a competition. We were provided with snacks during the evening, M&M's, mini Hersheys bars, Gardetto's snack mix...and fresh baked King cakes that were indescribably delicious and fresh New Orleans coffee! Class ended for the evening around 9:45. We went back to the hotel and slept (sort of) for 4 hrs and returned to the site at 3am (even though he said class would resume at 7:30) as he was prepping the fire. Around 3:45 he put both pork & brisket on. He went through prepping chicken & ribs. At 8am we were served an amazing breakfast...scrambled eggs, bacon, sausage, bisquits and THE BEST grits! Johnny resumed class and went through chicken & ribs, seasonings and tips & tricks. The remainder of the afternoon we spent tasting BBQ from the Godfather. We had plenty of time for questions and pics through out the entire day. This was an A1 class act. The details were very obviously taken care of and it showed. If you have the opportunity to attend his class...DO IT! Trish was amazing and so very welcomming and personable. She was a crack up through out the day. She demoed how to make boxes and really kept Johnny on his toes. It was a blast!

Im new here, and trying to get my post count up so I can view and participate. There sure is a lot of security on this forum! Makes it hard(er) for us newbies to jump in and get involved.

I recently attended a cooking demonstration hosted by Chris Hart. I just wanted to post some of my impressions in case someone here was considering it.

DO IT!

It was an excellent experience for me. I was anxious that it would be an investment that wouldn't have yielded any significant tips, tricks or outright "how to really do it"... Boy was i wrong.

Chris's 2 day class is run just like a competition cook. It allows you to see the timing and structure required. Its in a setting that allows up close and personal observations and questions. Chris kept it interesting and fun, while packing it with not only how to do it, but teaching us the WHY to do it.

In retrospect, the cost of the class, was not just worth it, it was a downright bargain. I was surprised to hear that one of the attendee's was on his 2ed class with Chris. Having taken the class a few years earlier, I can appreciate that because Chris's class is his honest to goodness "competition cook" technique, which evolves and changes. Taking it again in a year or 2 might be on my to do list.

I would post a link to his twitter account (which is where i heard about his class schedule), but i cant yet... find him at WickedGoodBBQ on twitter and online.

Attached is a shot of the chicken i prepared following the class. Complete success! Next weekend...RIBS!
