View Full Version : Well Ladies, what's cookin' this weekend

Guess we know Phil and Greg have about 5 things on their menu tomorrow, what's everybody else got hittin' the grates?

I cooking 6# of country style pork (butt) ribs, which are marinating in pineapple juice with a splash of teriyaki and some rub. 6# of country style beef (chuck) ribs marinating in TK marinade with cherry coke instead of DP (Brian, save a space next to your rice for my DP). A 4# pork loin and 4.5# of thick sliced bacon, my tomatoes are beginning to ripen and I gotta have some smoked bacon for BLT's, doing enough to bag up and put in the freezer for quick nuking.

Ain't cooking this weekend. I'm pulling 7 days in a row at work so I can get 3 off together next weekend. Then, I'll probably be doing more cooking than I ever planned for 2 days! third day will be crash day, for sure!

I'll be breaking out the dera for some pork ribs. Kids love them.

Hey all,
Got 3 slabs of pork, 1 of beef, and 6 chicken breasts. The banderas first smoke sice its burn in.

Might even get a fatty, now that i know what one is!

I was going to just do some spare ribs on Sunday but I have a problem with only smoking only one item on my Bandera. I decided I might as well start it up tonight instead and throw on 12 lbs. of butt, 4 lbs. of Polish sausage, along with the 12 lbs. of pork spare ribs and tips. Why waste all that good space? Should have bought another 3 lb. bag of almonds. The ones I smoked last weekend are almost gone!

My plan is to grill some Portabella Mushrooms, Might go get some ribs for the smoker on Sunday, try to do a fatty while I am at it. The fish will probally wind up on the grill.

8# butt (been on since 4am), spares and a brisket. Snack will be 2 fattys. Hosting a b-day dinner for a friend. Good excuse to cook right? Last weekend my excuse was that it was "Shaq's Going Away Party". :lol:

Went to store on Sat. for stuff to grill burgers. Came home with 2 slabs of ribs, a fatty, and the things to mix up a mango salsa. Got up this morn, Sun. Called Brother over to keep me company, lit the smoker threw in the ribs, I soaked them in Apple Juice over night. Added the fatty to the smoker and sat out and talked with my Bro. When I pulled the fatty off, my son was hanging out with us. He LOVED it. I added a little sauce to it, because I accidently got the mild. When I pulled the ribs off, my wife, the CHECKER, tested them and deemed them back to smoker for another hour. Started cleaning the gas grill and grilled some hot dogs, and mushrooms. Pulled the ribs, left them in kitchen. Was working on fish when wife came outside gave me big kiss, and declared BEST RIBS EVER. THANKS BRETHREN you don't know how long I have waited for somebody other than me to like my ribs.

Hey KC....I got up Saturday at 4:00am and put on five slabs of Saint Louis style ribs, two briskets, 5* butt, and four fatties for my neighbors wedding party that evening. I printed out the tips and advice from several brothers and had them right at my side so when needed, you all were right there with me when needed, got my fire tending under control which was advice from the brothers also, and the end result was all the meat turned out so juicy and tender, the meat was falling off the bone. I got MANY compliments, which I told them that I could not have done it without my brothers from this forum, I salute you all. Could be hope gor me after all :wink:

Introduce them to real Que done over real wood and it will be 99% leftover on the other stuff!

Craig, I have a special routine for camp smoking, it goes like this.
Check fire, open fresh frosty, check hammock for proper operation for approximately 1hr, repeat these steps until food is done.
Have a great time!!

Got six 1" pork chops, boneless, going on the kettle in a little over 9 hours.

Love them big honking Costco pork chops.

Dales Marinade for 1/2 hour will be all they need.

Got a 5 lb packer flat, 5 lbs of bone in beef spares, and a fatty goin on the dera sometime tomorrow.

20 pounds of pork butt is going on Friday night. And Sunday I'm adding an electric-powered rotisserie to the box. I was digging around in my folk's basement and found a complete unopened electric-powered rotisserie add-on for some long-forgotton grill. The instructions say copyright 1971! I wasn't even born yet.

Is that the famous "Elgin Hot Guts" from Elgin Texas? I've heard about it never tasted them. Are they as good as their reputation?

Same town, different place. The more famous of the two that you are talking about are from Southside Market. Both are good, but I prefer the blend for the Meyer's a little better.

Don't know, this may be the first weekend I pull the smoker out. My wife and girls don't eat pork, but I so want to work on getting a GOOD pulled pork sandwich. Ideas? May have to do a couple of Chickens just to keep the fire streak going.

Smoker box. About 3/4 the way up, level with the gauge hole is the idea currently.

Don't know, this may be the first weekend I pull the smoker out. My wife and girls don't eat pork, but I so want to work on getting a GOOD pulled pork sandwich. Ideas? May have to do a couple of Chickens just to keep the fire streak going.

Yeah; here's some ideas.

1. cook pork and chicken simultaneously.

2. finish by pulling/shreading both.

3. mix a good BBQ sauce into both.

4. "accidently" confuse the two and feed wife & girls pork because you thought it was chicken.

Neighbor is having his band over on Saturday. Invited me, then asked if I would like to bring the smoker over and cook some kind of pork his bandmate is bringing. Sounds like a couple butts. I'm donating 6 slabs of BB's and some meat popsicles. Someone is bringing a salmon, doing brats, dogs and whatever else people bring.
