Went fishing and now I have some Barracudda fillets to cook. I don't want to light the grill. The Webber kettle is way too much trouble now that I have used my smoker, so I want to add the fish. Questions, how long does fish have to be in the heat? What temp is done for fish? Wife is tired of smoke taste to everything, I have a water smoker, if I add wine, or beer to water pot, will that give fish good flavor? or will that just be a way to waste good wine or beer?

dont bother beer or wine in the waterpan... its wasting it, but some fresh herbs make the yard smell nice while stuff is cooking. I never did barracudda.. but salmon gets done in under an hour and a half at 250-270. TK will be better to help you here. Same rules apply.. its done when it flakes and is opaque.
if you dont want smokey flavor use charcoal and a light wood, like ash or alder and all the sweet fruits... peach, pears, orange... etc..

I agree with Phil. Use a light wood like alder (best IMO). Cook the Cuda just like Salmon ~1 hour what ever you do do not over cook it starts to taste fishy.
