I saw this on BBQ with B. Flay. Don't really know what to make of these.

You can get a similar cooker (we've run this rabbit before!) in south Florida and some cajun areas. The cooker is plywood and lined with sheet metal. The top holds the coals, kinda like a dutch oven.

Was this thing invented in Illinois? I did taste some pork cooked this way, it was more like grilled pork then BBQ it was tasty but dry. The pigs were sucklings’ so they were thin and cooked very quickly. If there is a quick way to cook pork then a Virginian will try it at lease twice. We do have the all you can eat pork pull 18 hours of pork and beer and no clean-up.

I did a little quick research and this is actually a Cuban (not Illionoian!) cooker - open the web page and click on the pork cooking instructions.

No, it's not 'que like we do it but it is a pretty ingenious way of cooking some really moist and tender food.
