I won't make a dirty joke about this one because I don't feel like going to the penalty box. This could be a great throwdown because there's lots of possiblities with sausage. Some sausages are bigger than others I hear.

I agree. Some sausages are huge and others are just small weiners.

I have to agree. Beetroot is my fave thing in the whole world. A Burger is not complete without beetroot. Even McDonalds in Australia had to concede eventually that they had to have a burger with Beetroot... the Mc Feast. I'm sure it's on Aussie Menu's only. I consider EGGPLANT to be the antithesis of beetroot. I hate eggplant soo bad I can't understand why anyone would bother to plant it at all.

EAT MORE BEETROOT... Eggplant sucks.. I don;t care if this does not make sense:crazy:

Just eat some beetroot and don't eat Eggplant... did I say that already...

Nope I didn't... DON'T EAT Eggplant... Beetroot is cool...

Sorry... off to bed now....

Zzzzzzz

OHHH Did I Mention......

Oh I Did.. nevermind

Cheers Farkers!

Southern Smoker, sausage here comes with or without skin. A fattie is just a big skinless link.

Welcome to the land of the Midnight Sun. We arrived Wednesday to visit some friends and yesterday we had a BBQ . Today begins the midsummer celebration and it is typical to have a BBQ at a cottage. The stores naturally prepare for this event:

http://i770.photobucket.com/albums/xx346/ecodeps/sausage/IMG_5769.jpg

We were a bit surprised to find this in the local market.

http://i770.photobucket.com/albums/xx346/ecodeps/sausage/IMG_5793.jpg

For the BBQ we had some sausage and some salmon and also some chicken and pork steaks. Finnish and American BBQ styles blend together nicely.

http://i770.photobucket.com/albums/xx346/ecodeps/sausage/IMG_5776.jpg

These were some tasty local sausages. Some things don't need translation.

http://i770.photobucket.com/albums/xx346/ecodeps/sausage/IMG_5779.jpg

The meal is not complete without potatoes.

http://i770.photobucket.com/albums/xx346/ecodeps/sausage/IMG_5764.jpg

These are much tastier than the ones we get, so more potatoes....

http://i770.photobucket.com/albums/xx346/ecodeps/sausage/IMG_5765.jpg

We had way too much food for one grill.

http://i770.photobucket.com/albums/xx346/ecodeps/sausage/IMG_5780.jpg

While the sausage cooked, our host cooked the salmon.

http://i770.photobucket.com/albums/xx346/ecodeps/sausage/IMG_5781.jpg

Mmmmmm, grilled salmon.

http://i770.photobucket.com/albums/xx346/ecodeps/sausage/IMG_5782.jpg

While everyone cooked, the girls played

http://i770.photobucket.com/albums/xx346/ecodeps/sausage/IMG_5790.jpg

There was plenty of sausage

http://i770.photobucket.com/albums/xx346/ecodeps/sausage/IMG_5787.jpg

and it was a lovely time for all.

http://i770.photobucket.com/albums/xx346/ecodeps/sausage/IMG_5789.jpg

I think you can use this picture for the Throwdown

I submit to you, Brethren, the traditional South African sausage, Boerewors (farmers sausage). Beef and pork coarsely made with coriander, and eaten anywhere people gather as a boerewors roll. I have included home made tomato and onion relish which is also a staple at a South Afrian braai (aka bbq). Ryan

Having just joined this forum, just learning what a fatty is (despite the text below my name) I decided that I'd smoke a fatty and enter it into the throwdown. I decided that since it was my first fatty, i'd go for the simplest possible recipe and do that. From all I've read so far, to the purists on here a fatty is Jimmy Dean sausage rubbed and smoked. Many will stuff them, and I'm sure I will someday, but for this, I went pure and simple. pron attatched, i'll post a second time with my official entry as I haven't yet figured out how to embed images without attatching them.

I submit for your consideration my first UDS fatty. Started with JD spicy, rolled it out in a gallon ziplock then smeared roasted red peppers and sauteed onions on half of it. rolled her up in a bacon weave then on to the new drum. Sliced it up, could hardly wait. The roasted red peppers really added a nice depth. Use the bottom image for my entry.

The fatty was around for a long time before folks started wrapping it in bacon.

Okay cool. I was afraid I'd screwed up my first fatty for a second. I was under the impression that the bacon weave was kind of like stuffing... something added on to the original, tasty as it may be. I'm going to make another stuffed with sharp cheddar and jalapeno slices, with a bacon weave next. trying the two extremes. Should I use the mt. olive style slices that are pickled, or slice a fresh pepper and maybe roast it?

Okay for this entry I did my Italian Sausage meatballs. Took the sausages out of the casings and added spices, egg, and parmesan cheese. Mixed it all up and made meatballs the size of small oranges. Then off to the smoker for an hour and a half at 250. Served over pasta with light sauce and shaved asiago cheese. Please use the last pic for my entry.
