I just wanted to say thanks to all who have helped me in the last couple of weeks! I ended up going with the Chargriller super pro without the firebox (for now). I smoked two 7lb butts on the 4th. They cooked for 13 hours and came out just how I had hoped they would (fallin off the bone). I am pretty proud for my first time. My wife said it's the best bbq she's ever had. I'm not gonna go that far but I am quite proud. Couldn't have done it without the tips I got here. So THANKS!!!

The only problems I encountered was ash buildup under the fire (which I will fix next time by raising the fire and I had problems with my hickory catching fire and raising the temp too high since the fire is very close to my cooking area. I guess the firebox would fix that problem? All in all a great day!

I also would like to thank all of you that helped me by giving me such good advice and tips. My first smoke was a 10.5 lb brisket, four slabs of St. Louis style ribs, four fatties and a 4 lb german sausage. The result was "VERY GOOD"! My neighbors and family said it was some of the best que they have had. The meat was falling off the bone, and no one had ever heard of a fatty, but now they are BIG fans of a big tasty FATTY!! THANKS to you all, my debut BBQ turned out GREAT!

MQ,

Just keep pusshing the ash to the far side of the grate to keep the air flowing under the fire. I have a seperate set of "fire tongs" that I use exclusively for moving coals and ash. Just keep the area under the fire clear and you will be fine.

As far as the hickory goes, are you using chips or chunks?

How many bags of chips would you need for a 13 hour burn? Glad to see you first times turned out so great.

Markbet, you are about as crazy as DFLittle if you cooked all that meat for your first smoke! :twisted:

I thought I was bold with a Boston Butt, a slab of cheap-**** greasy ribs, and some Turkey Drummies for my first Bandera Adventure :lol:

Yep! I was a little nervious at first but kept a close watch on it all and it turned out OK. Well let's say that there was no leftovers for my lunch yesterday!!..lol.

the fatties were the novilty of the BBQ. Two of them were gone 15 minutes after I took them off the grill, man did they like those things. I think that just wet there appetites, I just could not believe that ten ponds of brisket, and fourteen pounds of ribs were devoured.
