4th of July prices in Houston:
HEB - .55
Fiesta .57
That might be low enough to consider FedEx shipments.
May have to get up Sunday and do something about this.

Gee. Those poor folks at HEB and Fiesta seem to have an overstock
problem.
The neighborly thing to do would be to buy a couple to help them out,
you know, in their time of need.

They do contribute so much to the community. Think I'll get about 6 for the freezer. I'm sure that it is nothing but those nasty old packer cuts with all of that fat too.
Crap! Send me about 200# -- NOW.
I'm gonna have to spring for $2.15 per pound on Friday!!
I think the freezer would quickly become FULL. We hit a holiday here and they either put it "on sale" for around 2 cents less or they jack the price up. Kinda like gas prices.

Good point. Best posted price is $0.55/Lb. and the high is almost $1. Having been conditioned for $0.49/Lb. it might be time for us to boycot such flagrant price gouging. Anybody have the # for the state AG's office? Hope you other brothers will feel out pain and support any grass roots movement that may come of this.

I feel your pain! :D
I lived in San Antonio for 9 years -- we used to stock up every holiday and buy at least 2-3 packers to go in the freezer. Always looked for the ads in the Express News to see who had brisket on sale, best price, and what limits -- we've been known to stand in line seperately each with two briskets in the basket -- sometimes not even a basket -- just standing there with the cryovacs :D

Then there is the $10 additional purchase thing they do from time to time. This week HEB has all of their pre-marinaded fajita meat featured. Buy the big bag of beef, chicken, or pork ready to grill and you get a choice of two cast iron skillets, or a cast iron fajita platter. Can't wait to try to get all of that crap into our bags for the flight home Tues. morning, or what it will look like when it gets scanned at the airport.

5 year old with 2 briskets and a $20.

It has been known to happen!
And the $10 additional purchase was never a problem -- some sausage, chicken, whatever was just the thing!!
The skillet will proably be confiscated as a "blunt weapon" :D

According to Mary, he thinks they'll confiscate it thinking they are weapons capable of causing blunt force trauma.

Albertson's in DFW area has packer trimmed briskets for $.78/lb starting Friday (July 2-8th). Limit 1 w/$20 purchase. Excludes alcohol.
Got some Manda brand smoked sausage (from Baton Rogue) at Albertson's for $5.66 for 3 lbs. Sale price sez $6.99 for 5 lb box but have only saw the 3 lbers. Damn fine sausage that i usually pay $8.99 (for 3 lbs). Guess I'll grab the biggest brisket they got Friday & a buncha sausage for the freezer.
Well, brisket is still high but I did manage to bag a case of flats from Sam's for $1.95 per lb. (87.5#) and then nabbed a case of packers at GFS (used to be Smart & Final) for $1.39 (76.8#) -- so I've got my brisket for Sunda -- also went ahead and got 100# or kilbasa to grill. Still need to make another run tomorrow to pick up spices, drinks, pans, etc.
Anyone for Brisket & Sausage with slaw, beans, corn, rolls, drink, and IC Sundae for $5.00? Only at a church that sweats about "making money" sheesh -- if they'd turn me loose I could get the entire kitchen remodeled and it wouldn't cost them a dime!

Will, my limited experience says you gotta go by temp, at the flat. Your operating temp will influence the time a lot. And briskets are funny, at the same intended pit temp I've had a 9# take longer than a 12#, I figure fat content and other variables with each cut enter into that. I try never to exceed 220 when cooking a brisket. Last weekends 9 and 10 pounders took 13 hrs to reach 160 and another 3 or 4 hours wrapped in a 210* oven for the flat to reach 200.
As a general rule start figuring at 1 to 1.5 hours per pound -- assuming your cooking at 250 or below :D

I have been using a trick from the TV Food Show. Use probe to measure temp in the flat, when it is done, remove the brisket from the smoke. Cut off the point where the fat line joins the point and flat. Foil wrap the flat and put it in cooler (no ice) and return the point to the smoke with temp probe inserted until it's done. The foil the point and into cooler. Works great.

Bout an hour per pound is right. If your below 220, I'd say 1.5 per.

Thats how i've been doing it.... remove the flat at 200 and wrap it, let it rest in a cooler. Return the point and nose to the smoke till they hit 200 too.
