Knew I had to get this one in early or run out of time like I have the last two throwdowns. My aunts cater weddings and their chicken salad in puff pastry shells is one of the most popular things. I decided to try an all grilled version of it. I grilled the chicken, pineapple and onions. Chopped it all up and added a little celery, mayo, and salt and pepper. I think the grilled version is even better than the original. Please use the last pic as my entry.

What a great idea grilled pineapple in a chicken salad.
My husband asks for pineapple in his coleslaw, which I don't think is right,
but in chicken salad and grilled I can't wait to try it.
It looks fantastic.

For some reason (Throwdown) I decided to give the grilled fruit salad thing a try again. This time I skewered up some Pineapple and melon, sprinkled them with brown sugar, and threw them on the OTG while we were cooking up some burgers and foiled potatoes.
http://i940.photobucket.com/albums/ad246/bigbutzbbq/Random%20pics/0531101841.jpg
While these were cooking away, I decided that it would be great to come up with a streusel like topping to put over the top of the fruit salad. After digging through the fridge, I came across a block of neufchatel cheese that was close to expiring and figured, I'd go with a cream cheese type frosting for the grilled fruit salad so, I gathered together the following ingredients for it.
http://i940.photobucket.com/albums/ad246/bigbutzbbq/Random%20pics/0531101845.jpg
I then stirred it all together and let it cook for a few minutes over the low heat, just until it started to bubble (my stove runs quite hot).
http://i940.photobucket.com/albums/ad246/bigbutzbbq/Random%20pics/0531101901.jpg
When it was all done, I took the pineapple off the skewers, chopped it up, mixed it with the melon, through on some strawberries and blue berries, and then drizzled my cream cheese type frosting over the top. (please use my next pic for my Throwdown entry).

Chris, this is for reference.

Love the "BOWL" Gore!

Ok Guerry, it doesn't look like a "bowl" -- I actually rested it on it's side, like a cornucopia. I did it this way mainly for the picture so you could see the innards better. For some reason the pic makes it look flat, but it really isn't. Here's an image of another one I made previously:

Let the salad days rage on: Hail Caesar!

I decided to make a Caesar salad.
But even I have to admit that salad alone is not a meal so I added chicken. I am also a firm believer that you can't have too much bacon on a Caesar salad so I stuffed the chicken with it as well as sprinkled it on top. I made the stuffing with bacon and Parmesan cheese.

http://i770.photobucket.com/albums/xx346/ecodeps/salad/IMG_0156-1.jpg

Then slit open some chicken breasts and filled them.

http://i770.photobucket.com/albums/xx346/ecodeps/salad/IMG_0157-1.jpg

These were grilled

http://i770.photobucket.com/albums/xx346/ecodeps/salad/IMG_0166-1.jpg

and sliced

http://i770.photobucket.com/albums/xx346/ecodeps/salad/IMG_0169-1.jpg

I made a Caesar dressing

http://i770.photobucket.com/albums/xx346/ecodeps/salad/IMG_0161-1.jpg

and dressed the salad lightly. There was a whack of garlic so a little went a long way.

http://i770.photobucket.com/albums/xx346/ecodeps/salad/IMG_0174-1.jpg

I topped things off with some olive-oil-toasted baguette rubbed with fresh garlic. I made some into croutons.

http://i770.photobucket.com/albums/xx346/ecodeps/salad/IMG_0164-1.jpg

I served this with bread and a glass of white wine

My Throwdown entry is just your average, everyday, plain old, good old fashioned MOINK Hole Salad...on bread to be eaten as a sandwich. Details can be found here (http://www.bbq-brethren.com/forum/showthread.php?t=86019).

http://i219.photobucket.com/albums/cc150/bigabyte/MOINK%20Balls/2010_06_05/MOINK_Hole_Salad2.jpg

It is similar to other meat salads like chicken salad, or tuna salad, or even ham salad. The primary difference is that I used MOINK Hole for the meat instead of those other so called meats. I also chose to used chopped banana peppers in place of relish.

It was actually very tasty!:thumb:

Beware the squid........

I seperated the heads and the tails (?) and marinaded them in olive oil, lime juice, a myriad of spices and some fresh thyme. I grilled them on a medium fire until opaque and with a nice flavorful char.

http://i113.photobucket.com/albums/n228/sipes2/BBQ%20Throwdown%20Pics/pulpo3.jpg

The calamari were placed on a bed of mixed greens tossed with a basalmic reduction. Served with an olive, feta relish.

http://i113.photobucket.com/albums/n228/sipes2/BBQ%20Throwdown%20Pics/pulpo1.jpg

When I came home from the store with a pound of squid, I was met with resounding boos from the 'under 9' United Brethren Anything Disgusting (UBAD), Local No. 6. I ate one of the tenticles right off the grill and dared the boys to give it a try. Guess what?! They liked it. Will wonders never cease.

Thanks for the challengin throwdown. :boxing: G'night Bruces.

Moink salad sandwiches or is that MOINK salad sandwiches? I guess it depends if they've been certified. Is there a regulation MOINK-hole? Good call with the banana peppers ... mmmmmmmmmmmm!

I dusted the shrimp with a touch of olive oil, then sprinkled them with
a nice coat of Tonys Creole seasoning. I grilled them till they were
just firm.
After plating the salad I poured a little Sweet & Sour sauce on them,
and on the salad; along with a bit more Tony's Creole seasoning.

Those two simple combinations provided a very nice array of flavors.
It was Sweet, Spicy, Sour, and full of flavor. The taste turned out
much better than I expected, and the picture turned out worse
than I wanted....but; that's life.

The MOINK Hole has been run by the IMBAS a couple months ago, and the idea was certified as MOINKable. I never asked about the MOINK Salad though, so it may not be true MOINK. I haven't asked either.

IMBAS is pretty strict about fillers. My guess is that the banana peppers would disqualify it. And what about the binder? If you held the moink salad together with bacon fat as a binder, that would probably be acceptable, but I suspect mayo would be a no-no. You know what sticklers they are.
