A or B - IF you had to choose one to turn in, which would you prefer and why

Id eat both and say to hell with the judges. let them eat KFC.

:)

hard to say becase of the brightness of the pictures but i think i would turn in A.. B looks a little pale in texture, like the skins not quite done.

I would say A, looks like a little more of the fat may have been rendered and skin might be a little more tender.

I'd say A has a little more pleasing color to it than B. That being said I'm not a big fan of those grill indentations, for me that screams grilled, high heat almost reverse sear chicken pressed in a grate.
I'm guessing one is 2nd place invitational chicken and the other is 66th place open chicken???
All said and done it would really matter on the flavor to me. Can't taste the flavor here.

I'd say B. The sauce on A looks a little gloppy to me.

The texture looks like a panini grilled sammie! Not really desirable to me.
I'd say A. The second one doesn't look as good to me.

Srsly. The eye is just riveted by the indentations.

Oh, okay, A, because I'd want the top left piece.

A as they look more uniform in size and color with a good glaze.

B has one or two pieces that do not appear to be fully glazed, the lower left one in particular has a large bare spot on the hinge side according to the lighting.

I don't see a big difference between them other than as already stated A looks like it has a bit more browning of the skin. I'd go with A because for some reason the bottom right piece on B looks like an empanada (but only looks that way in the pic I'm sure).

Look about the same but can't taste it or check the tenderness here.

I would go A the color looks a little better to me and it looks like the pieces a slightly more uniform. Both are pretty close to each other though and look good.

My thoughts exactly! I'd eat that piece for breakfast.

First reaction - B. They look like they belong together. However, the angle of the pic may have something to do with that. The color also looks more consistent - but that may be the pic as well. Both look really good. The only "problem" with B is that the thigh in the lower right looks like a calzone. Hey - while you're at it post all your other GAB turn-in boxes. Just so we can judge 'em, of course ;)

I like A better. It has a darker color.

Wow...tough choice. They both make me want to reach my hand in and grab a piece. Since I can only go with appearence, I'm going to say A, looks(ever so) slightly more appealing.... but still a very close call.

Slight lean to A because of color.

I'm leaning towards B. The pieces in B look like they belong together. The sauce looks more consistent on B, but that could be due to the angle of the photo.

A or B - IF you had to choose one to turn in, which would you prefer and why

A

Probably would give em both an 8 though. If you could get a little more of that caramelization evenly applied across all 6 pieces would bump it to a 9.

The both look almost the same to me. I would turn either in and judge them a 7

They both look the same to me. I will say the grill indentations do transfix my attention.
Nice trim job as well. Good coloring as well.

I'm just pissed they beat me.... ;)

You are assuming both of those are GAB pics. OK, they are.

A is the Invite that placed 2nd with the following
988 899 899 899 998 899 - 176.5716
So appearance was by far the weakness (same happened for our 7th place Royal chicken)

B is the Open which placed 66th of 190 (I don't have the score sheets, but this is my best guess based on mathematical possibilities)
889 899 677 887 778 898 - 162.8572

For what ever reason, our best chicken scores come when we don't try for that pillow top look.

monty3777
05-26-2010, 09:23 AM
So your appearance scores - despite that farking 6 which makes no sense at all - were almost identical after the low scores were taken out of each bunch (although that cost you a 9 on appearance). Were the taste and tenderness really that different to justify such a swing in overall chicken scores?

The thing that I keep seeing in Box B is the bottom right piece that looks like a mini calzone. Overall, I think the chicken looks very juicy and appetizing. I don't mind the grill marks.

KC_Bobby

Monty, probably - in retrospect, the open chicken could have used another 5-10 minutes.

Yeah, I should have hid that bottom right piece in the open - it's bugging me too.

Another vote for A, here. They're very, very close, but for me it's not the bottom right of B that tips my vote, but rather the bottom left. Too damn pale. Both are 8's or 9's depending on how they looked at the judging table.

I actually took a picture of my pork box from the GAB. But darn it if I can't access them on my camera... that's how nice it laid out for me. I don't think I have taken a picture in 3 years... Take that back, I took some last year at a IBCA contest I did...

Scottie, you show your 1st place Open pork and I'll show our 1st place Invite pork. However, it will be later tonight as I don't have it at work. Our Invite and Open pork boxes looked nearly identical. If I wouldn't see the pics side by side, I wouldn't be able to tell one from the other.

That was how mine were from last weekend, both very similiar. I had nice butts for both contests...

I'll post mine, honestly, I don't care. But I was serious about me pulling them off the camera. I think I have pictures on my camera from when I bought the camera last August... If that tells you anything... I'm pretty enept...

GAB Open 37th place chicken. We did do some garnish adjustment after picture.

Can you provide the appearance, taste, and tenderness scores? I'm not smart enough to figure them out based on the scores you provided. :heh:

Bob, both of those boxes look pretty darn good to me. The color on "A" is better but I think that "B" has a more symetrical (sp?) look. Either one would get at least an 8 from me, probably better if I saw them in person.

I'm likin' B, but yeah its a tough call. Seeing pics like this makes me want to abandon thigh sculpting and just cook Chicken.

KC_Bobby
05-26-2010, 11:58 PM
Brian, that's what I've learned from my results too. I know we don't have the best looking chicken - but I think judges are OK with that. I'm basing this on our past chicken results - our best looking chicken gets crappy scores - our non-perfect looking chicken does OK. For nearly 2 years I got overly concerned about app rather than taste and tenderness.

Not saying one can't do both and many skilled cooks are able to do it all well. But I've learned to not give up taste and tenderness for the sake of appearance. I'll take an 889/798 over a 977.

Ditto Bob. Last year I spent hours trimming, scraping, etc. I got lucky and hit the right table once. This season with minimal trimming and concentrating on getting the thighs cooked right and tasting good, I feel like I should be getting a call every week.

Tough to call...It's hard to concentrate on anything but the ridges. I would probably say B only because the pieces seem to fit in the box better...although the thigh on the lower right is a bit weird looking.

About those ridges - the first thing that came to mind when I saw the ridges was "BBQ." The ridges add a sense of traditional grilling. I think that I would tend to reward cooks for those ridges rather than be turned off by them.

The grill marks in the top pic look more appetizing than the chicken in bottom pic. The bottom pic makes me think of wet, fatty chicken skin. The top box makes me think of tasty BBQ chicken skin.
