What % of quotes booked is normal.

I was wondering what percentage of catering quotes given do you book or consider to be good? I figure if I book every all of them then I am too cheap, and if I don't book any I am too hi. But what is the magic number that is not poison to getting a reputation as too hi? So far I have quoted 16 since the 1st of April and booked 5 of those and 3 of those are still pending of which I think I will get 1 maybe 2. So that will be either 6 or 7 booked out of 16 quotes.
