View Full Version : WHAT'S THE BEST WAY TO DO WINGS IN A SMOKER

I want to do some wings in my BSKD. Anyone done much of that?

I was thinnking I would brine the wings, and smoke roast 'em then toss with some sauce. Or maybe crisp 'em up on the grill after roasting then sauce.

Whadaya think?

i ate at a place in chattanooga, tn last weekend (fastpitch tournament with the daughter!) that made the best damn wings I ever had. period!

what they did was smoke'm low for about 3-4 hours. then, rolled'm in some spices (absolutely no breading!), then dropped'm in a fryer for 5 minutes before serving. sauce was optional and really not needed.

they were, to quote triple-h, that damned good.

for those interested, the restaurant was called Sticky Fingers. not bad for east TN...

i smoke em for about 2 -3 hours at 250, Dont cook them completely, take them off when they're about 80-90% done.... throw them in a chafing dish with franks redhot doctored up however i want... and get them coated real good, then onto the grill to finish them crispy. I preheat the grill before putting them on and I keep the flame low on the grill and keep the lid closed for about 5-10 minutes. Dont want to dryem out or blacken them, jsut want to finsih the cookin.

I smoke mine 2-3 hours @ 350* like Phil, except I use Tony C's. Then I finish in Franks Hot Sauce mixed with a little margarine and heat in the oven. I've tried different woods, and the kids seem to like hickory the best.

heres my sauce...

stick of butter...
sautee a load of garlic in it.
add a bay leaf towards the end with a little thyme.
about 1/4 - 1/2 cup wine vinegar.
big bottle of redhot. think its a quart.
add more thyme, some white pepper.
simmmer low 5 minutes.

thats the base.. then I play from there. add beer, pickapeppa sauce, tobasco... chipotles in adobo... invent from the base.
