I know it sounds like sacrilege but it's true. So tell me, what do you cook to fill up the little spaces on your plate between the ribs and the pulled pork?

Well, before I took up the Q (about 2yrs ago) I was skilled in the kitchen. Right now my specialties would have to be Oven Fried Chicken & Oven Friend Catfish!

As some of you know, I dig caribbean food - rice and beans, plantain stuff, etc. And of course . . . FLAN!
My wife makes a wicked Tabouleh salad - no joke, it's good!

Pickled Herring is awesome with my ribs.
Beets are good, and radish salad are good
I am partial to Hungarian and Slavic sides.

No worries. You will have it. It is the simpliest thing. The recipe is really basic so that you can spice it up anyway you like it.

If I am feeling frisky in the kithcen, I 'll make tater salad. If not, I'll make slaw (it's easier). I do BBQ Beans with my homemade BBQ sauce, fresh green beans w/ pork or some collard greens.
We usually have steak or Porkchops as an appetizer.

When Phil was here in L.A. he asked me about a Salsa recipe. I figured I'd post it here for everybody to enjoy. Let me know what you think!
This is a great appetizer to put out while you are waiting on the BBQ!
3 Medium Tomatoes chopped
1/4 Medium sized canteloupe, peeled and chopped
1 bunch (6-8) green onions, chopped
4 Serrano Chiles (or 3 Jalapeños if your guests are wimpy), minced
1 bunch of cilantro chopped
1 tsp sugar
1 Tbsp Balsamic Vinegar
Salt & Black Pepper to taste.
Mix ingredients in a bowl. Eat with Chips. Simple.

Veggies. Lots of good old veggies. Like taters of one kind or another, grilled peppers, salad (potato, lettuce, and yes.....even yellow jello). If I eat nothing but meat I feel like I ate nothing but meat and that is not good.

sauteed summer squash, peppers, tomatoes & onions in olive oil
add fresh oregano and/or basil, garlic, salt & pepper and a little parmesan cheese to top. Yum!

OK...
You know that bone that you cut off the top of the pork ris to make them St. Louis style? I saved those bones and smoked them. Then I putt them in some boiling water with diced onion, some sliced red potatoes and a mess of green beans. Added some salt pepper and garlic powdered and simmered for about an hour.
Best greeen beans I ever had!
