Was wondering how many butt I can fit on the bandera at once--I figuring I can do about 8.
Of course now that the SYC is down the road have a party for about 400 to cook and one for 100 the same day!!

Planning to cook 4 cases butts and 4 chuckrolls with the bandera--3 wsm--bws party and the bws comp--we be smoking for sure!!

There are gonna be some logistic problems for sure!!!

I am not sure you have enought hardware and people ware for 400 - David can you chime in?

My full bandera episode for 20 people was a long long day and a nightmare of logistics

I would say you can do 8 to 10 at a time, depending on size.

I got 9 racks (I think) so its just a question of spacing and rotation.

Probably 4 each in the WSM, but you knew that already.

2fat - two weekends ago my buddy and I did12 butts at once in the Bandera.

We used all four racks, there was no vertical room for another rack even
if we had one.

We had sixteen butts total to do at a weight of 132 lbs. If your butts are
smaller, you might get 4 per rack. Larger - maybe only two per rack.

With 12, and perhaps with 8, I dunno, you have to rotate your butts
(don't pass up that phrase guys) to even out the cooking process. The
key to "butt manipulation" is the butt size.

Also, with that many butts, you'll need a hotter fire (more mass to
cook) and you'll generate more fat drippage, giving you the possibility
of a grease fire. I had one. It was cool. It looked like Mt. St. Helens
coming out of the flue. Woohoo!

I did that. The only time you wish you had the drain mod!!! I didn't have the fire, but did have half an inch of grease in the bottom of the smoker and all over the patio. (and a sick Daschund that found it before I found her).

Seriously, if you do fill your 'dera up that much, buy a NEW plastic pump up insecticide sprayer, then put your vinegar/apple juice/oil mix in it. You can mop the whole inside of the smoker in seconds this way!

I would not cook more than 6 large butts in the beast. Too much temp. variation if you overload it. Stagger them two per shelf, alturnating front/back. And then still rotate up/down and left/right each hour or so.

If I was needing more done, I would recommend cooking half one day and half the other. You can even cook butts weeks in advance and freeze.

well the pork order just got a touch bigger so guess I well have to do atleast 5 cs's of pig parts--will cook about 1/2 this Sat and foodsaver freeze--do the rest next friday along with 4 chuck rolls---there will be a bunch of grease around for sure but thats ok--one neighbor kinda pisses me off sometimes so pour the leftover grease under his deck and shoot the skunks when they come calling!!!

hardest part is gonna be getting it all pulled--sauced and keeping it hot for service! Will put them nescos to good use for sure!!

and I was kidding about the grease---just pour down that grrate at the end of the driveway<LOL>
